this is why I love FutureCanoe's channel, he's just a guy trying to cook while being honest about it, often he follows a video and he says "the video is a 10/10 but my execution was a x/10", we see the food without hundreds of filters and good lightning, or the way he changes one ingredient with another that sometimes it's not even a great substitute but it's something that we all did or do in our kitchen.. The thing about baumkuchen is that it's not even made the way he made it. Baumkuchen needs specialized equipment to be made and so it's not usually made at home (it's made by pouring layers of batter on a rotating spit in front of a broiler and letting them cook). If you wanna do something like baumkuchen but you don't have the spit+broiler you can make schichttorte, which is basically the same but inside of a mold and you pour thin layers one on top of the other after the last one finished getting golden. He didn't even do that, he didn't even make a pionono. He made a pancake burrito.

As someone who bakes quite a lot, a lot of his stuff doesn’t come out right. The reason macarons are so difficult to make, is because the difficulty is to make them *perfectly*. Macarons can look good, but they might be air-filled, or the foot might be wrong. It’s hard to get it perfect. What he made was far from perfect, so of course, it seemed easy to him, since the process is easy when you’re not careful with it. It’s hard because to get them perfect it’s a tedious process.

I'm german and Baumkuchen is COMPLETELY different from what he made. Not only in terms of thinner and more layers. It is made in a completely different way and is something else entirely. He called it "a bunch of rolled up crepes" (which he also didn't make as crepes aren't pancakes but that's a different story). Baumkuchen is baked in a very special way. The bakers have some kind of rod that rotates near a fire or oven (kind of like kebab i think?) but horizontally. They add the tiniest amount of batter and spread it on the rod. After the dough has baked, they add a little bit more, let it bake and so on. Sometimes they also add some kind of jam in between the layers. In short, Baumkuchen is a very advanced thing to make and special in its process. If he wants to screw up the dessert, at least he should try to screw up the actual recipe / dish and not what he THINKS it looks like.

THANK YOU FOR SAYING THAT! His attempt of making Baumkuchen was so bad, it hurt my feelings as a Baker (Konditor, though I am an apprentice) . Baumkuchen is considered the "King of Cake" because it's so incredibly time consuming, since you have to layer the cake batter and marzipan mixture to like a millimeter thin, while this rod is spinning. You can trust me that's a hell of an arm workout, especially if you have to do it all night long.

I always took his account to be ironic/trying to take the scariness out of baking/cooking. Like baking/cooking can be very intimidating (with good reason!) but I always saw his account as him trying to show people that there’s no harm in trying something new all while trying to be comedic -and while I’ll admit his comedy doesn’t always land - I don’t think it’s meant to be rage bait or that he actually thinks he’s a “god at baking” I just think he doesn’t focus on his mistakes bc that’s not what his content is abt, which is showing people they can try something new and be proud of it even if it’s not perfect.

Yeah when I first started watching him, I always thought it was a joke too, but over time his ego really started to skyrocket and watching him really butcher desserts and food, saying it’s perfect, instead of just being like oh it’s a good attempt or whatever, rubbed people, including myself, the wrong way. I know his videos are meant to be somewhat satire but they don’t always come off that way 😭, especially because he doesn’t address criticism or even try to redeem his mistakes, and as a home cook or someone learning to cook, that’s really not what you do. So while I think he started off with good intentions, they’ve kind of been blinded by his own ego.

The thing with most baked goods, in my opinion, is that they're really easy to attempt but the difficulty that people speak of when it comes to baking is perfecting it. Macarons are actually pretty simple to make, anyone can follow a recipe and get pretty decent looking macarons, just like this guy did on a first try. What makes them difficult is knowing where in the process you made mistakes that affected your outcome, and that often takes a lot of trial and error and knowledge. It's the same with pretty much every single baked good.

I feel the same, I think it's either meant to be a comedy gimmick or a way to get clicks and attention, and clearly it works! At the same time though, some people could take his videos seriously, and even if they know it's a joke, they can still find him annoying, hence videos like this. There's also something to be said about how his attitude could affect viewers and teach them different things and whatnot, I just don't wanna think that deep into it tbh, but yeah, I think the main issue is that people can't tell if he's serious or not, at least not easily, and then they find him annoying.

As someone who *is a baker* , this series always made me very angry. Not because he was trying to bake after never baking before but because in a lot of his videos he either cheats on the hardest parts of the process, or he does not follow the usual recipe which can change ***EVERYTHING*** even if its a close substitute to what you were using. Everything in baking is so nit-picky, and not following the ingredients given can drastically change the outcome. Him ego baking, teaching people it is okay to not follow the ingredients, could very well make people think it's gonna be quick and easy to find a substitute and finish baking it, making their holes high and when they fail then they get upset. Baking is *hard* , you have to be patient and *learn* what you're doing but this? Well it is amateur at best and down right baby steps. If my old baking teacher saw this in the classroom, with that big of an ego, he'd go full Gordon Ramsay on him for sure regardless of his level in baking.

I find him a refreshing change, because baking community has a real ego problem, and he pushes the needle the other way. Instead of having an ego that is pointed towards anyone that tries baking with phrases like "baking is hard, you have to be precise, it has to look a certain way, blah, blah, blah", its pointed towards the discipline itself. He makes baking seem less intimidating, more entry-friendly. And baking community NEEDS a guy like that. Sometimes, ESPECIALLY at home, baking is just for fun. And so what if macroons don't look store bought, if they taste deliscious still. And so what if he alter a recipe. Who tf doesnt do that in their own home kitchen?

Baking is one of those skills that you absolutely learn mostly through repetition, and to make a lot of baked goods without improving takes a deliberate effort to do things poorly, I think. There's a channel called "anti-chef" which started with a basic dude who knew nothing about cooking years ago, and he's still not at master-level or anything, but he knows the techniques and how things work and should work, because he's put in the hours, and that's something that's almost impossible to miss happening if you're trying to actually make things well. Also, Claire Saffitz (basically the authority I go to about baking) said once that the most important and underutilized ingredient in baking is time. Most people don't, say, cream butter and sugar long enough, or wait for things to set, or take the time for the oven to come to temp, or whatever, and that's something this guy seems to avoid.
