I love this so much. My mother grew up in Iran and to this day can slaughter a lamb faster than anyone I have ever met. She always stressed the importance of respecting the animals sacrifice to feed us. We didn’t waste anything. This wonderful woman reminds me of her when she talks. I've lived in Latino neighborhoods for most of my life, there is an unspoken rule of live and let live. Everyone is kind of just doing their own thing, not worrying about their neighbor, and like others mention, they are probably getting some amazing barbacoa and bringing over some of whatever they have to share as well.

My uncle used to make it just like this when I was a kid here in Texas. I was so fascinated with the whole day long process with cooking in the ground like that. I remember the head just being posted up on the kitchen table while my aunt made homemade tortillas and menudo. Damn I miss those days

Traditional Mexican barbacoas are so delicious! I remember when I was a 18 and I used to live in Mexico City one day my dad was like: we're going to your tia-abuela's rancho in Puebla. As soon as he said Puebla I knew there would be barbacoa. The moment we got there and met all my relatives we helped them dig out the lamb that had been cooking the night before. My aunts and grandma made handmade tortillas and we all sat down to eat barbacoa and till this day it has been the most delicious thing I've ever had in my life.

I remember as a kid my dad would take me to this random house to eat, they were making the best carnitas I've ever had in the backyard. They had tables set up and you could sit down and eat there. It was all word of mouth like friends of friends, and it was packed. I remember feeling weird being there because I was not expecting the place we were going to eat at was in some random family's backyard.
