thank you so much for sharing this recipe and explaining every step! I actually messed up and bought all-purpose gf flour instead of Cassava Flour, but it still worked out very well, I just had to change the ratio to approx 1 water : 10 flour and trust the process. ❤

You know what.. They have never last that long in my house because we eat them so fast lol but I should try that and see. If you do try it before me, please let me know! I would like to think they may freeze better after rolling them out without cooking them.. but Im not sure.

I tried your recipe and it is magically accurate in terms of the amount of ingredients and the procedure. the tortillas are surprisingly soft, they bubble every time and hold a little liquid sauce:p each one was perfect and didn't crack at all, a miracle. my only objection is the taste - I'm experimenting with mixing in teff flour, tapioca, chickpeas or more almond one and just replacing 1/3 of the cassava with teff flour makes it more toothy for me. thanks for sharing a recipe that makes living gluten free so much more fun!

I’ve finally decided I prefer the chickpea flour tortillas to the cassava flour (both are delicious!) but this is the best and most complete demonstration I’ve found of either. PS your hair is gorgeous

I love chickpea flour tortillas as well, the taste it amazing! I actually use chickpea flour for my bread recipe! But for tortillas they just don't have the same elasticity as the cassava. & they also dont keep structure well for like pre prepped burritos etc :) They taste great though! & thankkk youuuu :)

Oh my gosh! These are amazing. I am not GF but my best friend has sever celiac. I was on a mission and had tried many. Also, I live in Texas and grew up making my own flour tortillas. I was supper skeptical bc it doesn’t have lard in it. But wow!!! These are delicious and I’m a huge fan of regular flour tortillas. You definitely cracked the code.

What enabled you to not use psyllium or xanthan gum? Is it because it's cassava flour?

Your recipe says 3/4 tsp salt but when you were mixing it you said half a tablespoon which is double that. How much did you use?

Yes it is very rich in carbs, no overt fats. I was paleo for years on a higher fat diet before I went vegan/plant based focusing on a high carb/low fat lifestyle.. and that high fat made the autoimmune disease I was diagnosed with soooo much worse so please be careful with Keto. Everyone I know that has been on it saw results of weight loss at first, but couldn't keep up with it long term and created a lot more health issues for themselves! good luck to you and your journey!
