I made these, followed to a tee and I had the same problem I saw another mention on your site, it turned out hard and crispy like a cracker. I used lard instead of butter so I’m going to try it again with butter to see if I get a different result. Maybe I need more water too even though the dough seemed the perfect consistency. I’m at sea level in Washington so there’s lots of moisture in the air so I didn’t seem to need the full amount of water. I made a Mexican pizza with it and the next morning I sliced up some avocado and put it on my leftover tortilla/tostada and it was yummy. I can see adding some cheese or nutritional yeast to the dough and making crackers if I can’t get the recipe right for soft tortillas.

My experience with gluten free dough is you need to make the dough a little wetter at the start. Once it sits for 30 minutes, the flours will soak up more of the liquid and the dough will be perfect.

make your own butter by whipping cream, relentlessly, till the liquid and solid separates. Squeeze the solid (butter) in cheesecloth and put your new butter into tubs. You can add a little salt through the cream before whisking if you want salted butter. Making your own is cheaper than buying butter coz you get a lot out of one tub of cream. Save the liquid for baking. Also, you can add mashed cooked potato to the batter being made in this video, to increase bulk. Add extra salt to taste (taste it!) and fry the same way on a hot pan (you can fry in butter, too). This is called Irish potato bread and is similar to pizza dough in consistency. They can be rolled thin for frying, then crisped like chips to be used in dips. Or can be thickly rolled (even to a 1/4"), fried, and afterward smothered in butter as a breakfast bread.. Usually, we roll a circle of the dough and slice into triangles like a pizza, and fry the triangles. They are delicious refried later! Keeps in a plastic tub in the fridge for quite a while (near 2 wks in my experience). Another Irish recipe is called boxty. Grate raw potato with skin on or off, add milk to the mix, so it becomes like a thick clam soup and pours from the spoon. Then add salt and your flour combination. Adding enough flour so it resembles thick pancake mix. Taste a little to see if it is salty. In butter, fry on hot pan like large pancakes. You can make then thin or thick by spreading with the back of a spoon. You can also add more milk, one tbs at a time, to make the batter more spreadable on the pan. These are delicious served immediately with butter. Store in a tub and refrigerate for around 14 days. Refry in butter as needed. They are a beakfast treat!

Oh, gosh. There wasn't really a recipe. I kinda just coated some boneless skinless chicken breasts in a Mexican spice blend (it was a jar of Mexican spices I bought at the store), pan seared them until done in a little bit of olive oil and butter, chopped them into bite-sized pieces and added some salsa to them. For the beans, I drained and rinsed a can of black beans and added them to a saucepan with some cumin, garlic powder, salt, and pepper, and a little water and heated that through. That's about it 😊

So I am not sure if it's my water or not, but after making the flour mix and then following this recipe, the tortillas cooked up in a way that tasted good and was great for quesasillas, but was basically already firm and toasty and in no way soft like this. Am I using too little moisture? Cooking too long?

Could be both. The dough should start out a little on the sticky side because the gf flours tend to suck up much more moisture than regular flour would. After resting, it will even out and feel fairly smooth.

Yes! Here's what I say in the blog post on my site: CAN I FREEZE THE TORTILLAS? YES!! These tortillas freeze very well! If you’re going to use them in the next day or two, leave them in a large ziptop baggie on the counter (with as much air removed from the bag as possible). They will start going stale after a few days. Otherwise, freeze them flat in a large ziptop baggie, separated if desired by a layer of parchment or waxed paper. It’s not necessary to separate them if you plan on thawing all of them to use at once, however. Just leave them in the bag when you thaw them!! Reheat them, well wrapped in foil, in the oven at 300 degrees for about 10 minutes.

Yes, you can use a tortilla press. I just couldn't find one big enough for the size of tortillas I wanted. I would put the dough between two sheets of plastic wrap (or an open plastic baggie) before pressing it and then peel it from the plastic when flat.

You might not be adding enough water. I'd add a tsp at a time more until you get a slightly tacky, but not sticky dough. You should need a little bit of flour to roll them out. Also, make sure your pan is hot enough to cook them quickly without drying them out too much.

I wouldn't put cooked totillas in the fridge because they're likely to dry out. Leave them in a ziptop bag or tightly sealed container at room temperature for a few days, or freeze them. Instructions for freezing are in the recipe card.

I haven't used bob's red mill so I assume it's because of that. I would suggest using my flour blend. That's why I developed it (because other blends just didn't cut it for the results I wanted).

I did everything according to the recipe, only I did not pour all the water, because the consistency was already enough. Still the dough cracked as it was rolled out and had holes in it. Somehow I rolled it into very small tortillas, but after frying they are hard and break.... still seems raw Inside…. I'm sorry because I spent money to make this flour mix... 😢

You probably just didn't add enough water. If you read through my post, you'd find that gf flours soak up more liquid as they sit. So you need to add what looks like too much water at the beginning. I state this in both my video and on the blog.

Flour blend, yes, but also amount of water. You need to add a little more water.

Never cut through aluminum foil after you’ve made the burrito. IF a small piece of foil breaks off and lands in the food and hits a filling during consuming you will experience a pain in your mouth that you’re not soon to forget. Just a friendly safety suggestion 👍🤓
