Just add the grated frozen butter to the dry flour, add ice cold cream, mix, press flat and fold over 3 or 4 times. Don’t ever knead! Good to go. The butter mixed in thoroughly is what gives flakey layers and helps the biscuits rise.

Ralph, I made these biscuits this morning to go with our breakfast. The flavor was wonderful! But they were doughy inside. I did everything exactly like you did except one tiny difference. I always scoop the flour into the measuring cup with a spoon so it won't be packed. Maybe that gives me less flour. I had to keep adding flour because the dough was too wet. Could that be my problem? Oh, when it came to the folding over, that didn't go too well either

@@LillieLong I think you're right. I think the scooping method you used didn't give you enough flour, so the dough was too sticky.

NOTHING NEW HERE... Self-rising flour is a mixture of all-purpose flour, baking powder and salt. Best to make it fresh, as needed. Heavy whipping cream is at least three times the cost of half and half, which works equally well in this recipe. Grated frozen butter is a normal ingredient for those who regularly bake short-crust items.
