May I suggest that you keep your egg whites out of the fridge and get them to room temperature before you beat them to stiff peak. First mix all the other ingredients and then beat the ragged whites and gently fold them into the mix. After your baking time is complete turn off your oven and let the loaf slowly cool in the oven without opening it for 20 to 30 minutes so it doesn’t cool too quickly and possibly doesn’t collapse so easily. I bake in a wood stove and put it in my warming oven bc I obviously can’t turn my oven off. Just a suggestion but honestly it looks great and I’m going to probably try some at some point.

It's quite simple, isn't it? 1 teaspoon = 5ml. 2 teaspoons = 10ml (or 1 dessertspoon). 3 teaspoons = 15ml (or 1 tablespoon). It tells you this in every cookery book.

Just a suggestion, mix everything but the fluffed egg whites. Then fold the egg whites in (to keep the air). Bake on a slightly lower heat (I know where you are), but a longer time. When I get to a kitchen, that's what I'll try. Thank you for experimenting. I do miss a bit of toast now and then. =:)

Thank you for this. What Judy Weigl said below I agree with. But I'd also add, you used too much Baking soda/powder. You also didn't add anything (vinegar) to activate the baking soda. The shine on the bread also makes me think there is too much cheese which adds to the density. All in all you've inspired me to see what I can come up with. I hope you share your avocado mayo recipe with us. I made some not too long ago and used the left over for my bleu cheese dressing. Was absolutely YUM!.

1 tablespoon of Baking Soda? That a LOT! Have you tried not using the cream cheese? My bread only uses Chicarrones and eggs. I use Baking Powder and Baking Soda (but not 1 tblsp.) Use an 1/8 tsp. Cream of Tartar, 1 tsp. Baking Soda (plenty), 1 tsp. Aluminum Free Baking Powder. No cream cheese. Bakes up tall but does settle as it cools. Not as dense as "carnivore bread" with cream cheese.

Similar to Judy’s comment…I was just reading how to keep batter airy. Mix all other ingredients, except for egg whites. Egg whites should be in the largest bowl because you are going to gradually mix the batter into the egg whites, not the other way around. Note: don’t mix the egg whites ahead of time for the best result. When adding batter to egg whites do it gradually and fold gently, add more batter and fold, etc. If I have all the ingredients, I will make it today and I will try her slow and longer bake time suggestion as well. Really looking for a bread i can enjoy. So far, the ones I have tried have a horrible texture.

That’s keto bread. Not carnivore with baking soda and baking powder in it. It’s a keto sandwich. There’s no point in carnivore if you’re keto.
