That avocado salsa you made, makes an awesome dip. I have a similar recipe, you add all the incredients you had, but you add a little red capsicum to it, some sour cream from memory and anchovies....... It's awesome!

been making these for many years and i use all the methods you do and waste nothing, i often make a stock from the offcuts and i sometimes throw offcut veg like onions on my bbq charcoal for added smoke flavour. nice to see someone that has the same skills. waste nothing great video. just how we should all cook, NO WASTE, i absolutely love coriander.

Well, I'm Mexican and both fajitas and guacamole look nice. Just a few things, those steps are just what people need to 'open' an avocado without slicing through their hands, nice Chef; and guacamole doesn't really need the zest of the lemon to prevent the avocado from going brown, either the heart or bone of the avocado in the guacamole or the lemon juice will prevent it, that's one mexican tip 😉😋

I’m pretty sure research has shown that putting in the pit of an avocado doesn’t prevent it from browning, but lemon/lime juice will. But wrapping it on the surface of the avocado and keeping it refrigerated will prevent browning.

Please do! I am in the progress of making a whole series on this type of stuff but, i'm happy to help you out. When looking for a knife, you want to hold it, touch it and feel it. The number one thing to look for in my opinion is the handle, it has to be comfortable in your hand. The weight is also important, you don't want it to be too heavy but also not too light. The knives I use are made out of Damascus steel. This is a blend of steels forged together to make a durable, sharp blade. Any knife has the potential to be razor sharp if you look after them and hone them on a steel before each use (which i am making a video about). Id suggest buying a cheap knife with a handle you like, use it for a while and see how you like it, before making a big investment into the professional (expensive knives). I hope this helps and i'm happy to answer more questions, if you have any!

I apologise for the late reply! Thats awesome. Stocks are such an important ingredient in so many different dishes. The fish stock will last 4 to 5 days in your fridge. You can also freeze it for 6 months. You can use fish stock for a lot of different dishes like, chowder, stews, bisques, paella, risotto, mussels, poached fish, fish pies and many more. My personal opinion I wouldn't add the tomatoes with the guacamole ( for future use of the guacamole ) other than that, I would trash that no problem. Trashing meaning a good thing, basically i would eat that in a heart beat lol
