I make his recipes and they always come out super good. Unlike American recipes, his aren't shockingly sweet which I love so much. Flavors are always elegantly balanced
I am not used to making frostings. I ran into the mistake of pouring the 250g whipping cream into the melted choclate and whipping cream mixture. Beginers mistake, it's supposed to be a ganache. @Emojoie can you correct the recepie? Otherwise lovely

After I add 200 gr of heated cream to 150 gr of dark chocolate , the consistency is runny, unlike in the video. I wonder if I should continue adding the rest of 250 gr
