This looks so good! I do have a question: all the eclair recipes I saw, or any recipe with choux pastry, require to fold the eggs into the flour dough. Is there a reason why you beat the eggs in instead of folding other than saving time?

Glad you enjoyed the recipe! Hmm, try to pipe them as evenly as you possibly can. I find that if there's even small imperfetions, they will show up as cracks when the eclairs are baked

Yes! It's essentially a kind of soured milk. You can do the same with whole milk: 1 cup milk + 1 tbsp white vinegar + 5 minutes

I find that cornstarch is a much better thickening agent. You'll need to use about double the flour to get the same consistency

Oh, no! I'm so sorry the recipe didn't work perfectly for you. Did they collapse after you took them out? If that's the case, you need to bake them for longer. Try adding an additional 5 to 7 minutes. You can also test by taking one out and checking to see if it collapses within a minute or two

I was wondering why you put butter into your coffee custard? Is there an actual reason for this or is it just how you like it? I thought instead of adding the butter I would add sweetened whipped cream to the coffee custard and then cut the eclairs down the side and add the coffee/cream mixture that way. I'm not a fan of strong coffee so this way it would lighten the coffee taste and on top of that I would also add less coffee granules so that it's more to my liking. Hi! I add the butter to create a more airy filling. Whisking in the butter incorporates more air into the filling and makes it creamier. You can certainly reduce the amount of coffee and keep everything the same

So I tried making these and I followed the recipe exactly... my custard looked fine until I put the softened butter in it... it just got all runny and did not hold its shape anymore... it was not thick at all I put it in the fridge it still didn't thicken and the butter did not blend in very well into the mixture either. It tasted good though... I can't figure out where I went wrong????

AliJaeJR the top part is thinner than the bottom. poking holes on it will most probably damage it.. it will just open up..😊 the bottom part is harder so piercing the hole there is better.
