I used ALL of the hot peppers in my garden for mine. I had Serrano, Jalapeño, Habanero, Lemon Drop & Cheyenne peppers and I added onions to my mix as well. I also made another batch that was all sweet peppers for the kids. I added onions, Gypsy, Hossinator Bells & HabaNADA *the not hot variety *. We love it on Bagels with cream cheese. My husband loves to mix it with a gauva pasta I made & cream cheese on a cracker

Interesting! I've never seen the cowboy candy made this way with the pineapple. I hadnt planned on making cowboy candy this year , but now maybe I will have to.... this looks wonderful.

New recipe for cowboy candy to me! Love the stuff, in tuna salad, on braunschwager toast, and to top deviled eggs (using a little of the liquid to cream the yolks), and all smoked bbq! Prefer the less hot pepper varieties and try to include lots of colors.

I let some of my jalapenos ripen red this year and then smoked and made chipotle. The flavor was excellent. But what I noticed was that the peppers (prior to smoking) were much milder than the ones I cut green. I personally like the heat so I was a bit disappointed they weren't hot. But I also love the flavor. Since Mr. Hoss doesn’t like the heat anyways you might enjoy letting some ripen. I've only done this once this year so not sure if that was a fluke or normal, but if you feel inclined to experiment some you might enjoy the end result. Chipotle came from the hispanic community so perhaps some of the hispanic subscribers to this channel with experience doing this will have better insight than I can bring. I'm going to try it again next spring. I'm in zone 9 and have at least one more pepper harvest this year, but since I don't have many and have plenty chipotle now, going to cut the remainder green. It's a slow wait for them to turn red and probably not enough time further north before the first frost, unless you already have some ready to pick now and can wait a few more weeks.

Thank you so much! My Jalapenos will be ready soon. I'm going to make this. I made Cowboy Candy for the first time last year and it was fine but I felt it could be better. Do you ever chop up your Jalapenos? I could chop them without it changing the recipe right? Dumb question, I know, but I always hear to never ever change a canning recipe. I'm rather new at canning too so I still have lots of questions. Thanks again!

Are your jars 4 oz or 8. You said small jelly jars and I was thinking 8 oz, but when I started looking for some I guess there is a 4 oz. jelly jar. I'm still learnin.😁

I love jalapeños and I’ve pickled a bunch, but every time I cut them and rinse them, I start coughing and my eyes water. The good news is I’ve found a use for all my left over Covid masks. 😂

This amazing looking Cowboy Candy would definitely be my choice should I be chosen for one of Chad's (Doss Farms) give aways!! It appears obvious that you made this batch for personal consumption, but I'd love to know if you make it to sell to the public? If so, you'll definitely have a new customer!! I'm like Hoss, nothing too extreme with the heat. Just a little will do. I used to be one of those "the hotter the better" folks. Age has a way of cooling down desires like that. 😉 💞

I think I messed up. I just put my batch of this in the water bath. I tried to make it like relish so I chopped the peppers in the food processor. I tried to not over process. They got watery. I drained it as much as I could by pressing on it while it drained. I had a whole lot of brine left over. I'm worried that I didn't get enough vinegar in each jar. I have more Jalapenos coming on and will use this recipe again just like you did it, with sliced peppers.

Had someone tell me to not use gloves as an arthritis remedy. Tried it once. Think it's called a counter-irritant in medical terms. Hands burned like heck, didn't feel the arthritis pain for several days after the burn was gone. Don't think I'd do it again however.

@@juliemulie1805 Wow! There is some treatments where they have a person get bee stings and that helps too, but I am not sure I would want to do that either (plus I like bees and they die after they sting you!)

@@WarmFuzzyVibes knew someone who took bee stings to manage their multiple sclerosis. I get severe reactions from wasp stings and even simple mosquito bites, so far haven't tested bee stings and am unlikely to do it purposely. I have a wild hive (in our woodland), and so far they like me and I've not been stung. I keep their water clean during drought, and they help in the garden...a good relationship.
