What's better than sweet and spicy Jalapenos? In this video I'm going to show you how to turn those home grown jalapenos into a candy that you can put on top of just about any food that you are eating. And they are totally addictive!! Cowboy candy or candied jalapenos is a quick recipe that you you can put straight into the refrigerator or can. They make a great home made Christmas gifts as well. People are always so intrigued with candied jalapenos.
Candied Jalapenos AKA Cowboy Candy
About 3 pounds fresh Jalapeno Peppers
2 Cups Apple Cider Vinegar
6 Cups Sugar
2 tsp garlic powder
1/2 tsp celery seed
1/2 tsp turmeric
Slice your peppers about 1/4 inch thick, set aside. Add your sugar, spices and vinegar into a large pot. Slowly bring to a boil and simmer 5 minutes. Bring to a boil again and add your peppers. Turn heat back down and simmer 5 to 8 minutes. Scoop your peppers out and put into a bowl and set aside. Bring your syrup back to a hard boil, stirring continually and boil for 8 minutes or till it starts to thicken (this will not thicken into a syrup, just thicker than water). Ladle peppers into hot jars, top with syrup leaving 1/4 inch head space and put lids on. Put jars into a water bath canner for 10 minutes for 1/2 pint jars or 15 minutes for pint jars.
This recipe makes about 4-5 half pint jars

great! just what i was looking for! i pickle jalapenos a lot but wanted to try cowboy candy. i bet everyone in the kitchen had very clear sinuses during this filming! nice job!

These were pretty mild peppers this time but it can get pretty rough if you get really hot ones 😬

I made 3 big jard of this the other day from jalapenos from the garden and it turned out soooo amazing, i literally eat it with almost every meal lol

Did my very first canning with this recipe tonight and you cannot tell me anything right now!! Dancing around the kitchen telling everyone to look at my 3 jars I canned 😂 I see why the recipe needs to me measured in pounds of jalapeños not the 25 I bought from the store 😂 Regardless, I’m so proud of my 3 jars. Thank you so much for your video!! Quick question, I had extra syrup and didn’t want to throw it out. What’s a good use for it?

I’m so glad you did it. I love cowboy candy. Don’t throw the syrup away . Go ahead and can it too. And when you cook a roast put the syrup in there with it… it’s a game changer on roast!! I love to shred the roast and make fajitas with it 🤤

@@lizhayes7474 OK! Now we’re talking! I have a chuck roast I was going to make Birria with but that sounds amazing! It was 108 here yesterday (thank God tor AC or I never would have tried to can) and supposed to be 102 today so a pot roast in the instant pot then shred it for some tacos sounds pretty damn good! Thanks again!

Learn something new each day. ✅ My mom just pick a whole bunch of jalapeno peppers from her garden, she cut them up with gloves on but it still lit up her fingers. I reminded her to soak them in baking soda and milk combo to neutralize it. I'm going to share this video with her for another way to put up her jalapenos! Maybe while y'all are here during the winter we can catch up with y'all. Another great video Love.

Yes this looks yummy 😋. Question ❓ do you measure the 3 pounds of pepper after you cut them? Trying to figure out how many peppers will need for the recipe 😃 thanks

No I honestly don’t really measure too much since I’ve been making it so long. I just cut up a bunch and then throw them in a pot. But you would want to start with about 3 pounds picked. They do shrink up when you start cooking so your gonna to lose a lot of the size during that process. So my advice is to make more than you think you are going to need.

When you filled the first container of sugar I was surprised with the amount. Then you said "it's a candy, go with the sugar." At that point I said Ok. . . You should have seen my eyes open wide when you filled the SECOND container of sugar :') Was that Clay at 5:31 Tell him he doesn't need camera time on the cooking channel!!! Lol glad he gave his thumbs up near the end.

Haha!! Yes it’s a lot of sugar but I was making a large amount. I think I did the recipe x 6. The normal amount of sugar is in the description. And yes that was clay sneaking into to sample the goodies 😂

What do you do with the leftover syrup? I want to make a jelly out of it!! I can’t find any recipes

You could probably do that. I just can the left over syrup and then I use it when I make roast or stews. It’s really good to throw a jar in with them. I can the juice in half pint jars that way when I use it with the roast or stews it doesn’t make them too sweet.

If l wanted to cut down the burn could I do that removing some seed quantity? Or wiil the high sugar counter the chilly heat some?

Yea you could remove the seeds to make it less spicy. The sugar does a good job of balancing the heat but it’s still really spicy. If you don’t like really spicy stuff then I would suggest removing the seeds.

New to canning, how do I adjust for elevation based on the difference of my location and yours? I want to follow more recipe/canning videos but want to make sure I’m being safe

When you buy a pressure canner it comes with a small book on how to use it and it will have a chart in there that tells you how to compensate for attitude changes. But you can also go to this website below and it talks about it as well. extension.sdstate.edu/altitude-adjustments-home-canning

No you don’t add pectin. The vinegar in it helps preserve it. I keep mine on the shelf for a year at a time and it’s fine.

Can you substitute honey for the sugar?

Yes you could. I have seen other people do it. It would change the flavor and it would be soupier. I do not have bees yet and honey is expensive to buy so I just use sugar. If I get my hand on an abundant amount of honey then I would certainly try to do it. I would suggest googling “cowboy candy made with honey” and then you could have a good recipe to go with. Or look for one of KZbin.

That depends on the jalapeños you get. Some are very mild and others are very spicy. I’ve noticed that most jalapeños you buy at the store are mild and then home grown ones are really spicy unless you buy a special no heat type to grow at home .
