Salted Caramel Buttercream Frosting - perfectly balanced buttercream made with sweet dulce de leche caramel! This is one of my all-time favorite recipes and it's perfect for frosting cakes and cupcakes. Use this frosting for chocolate, coffee or vanilla-flavored cakes. I use this for frosting an 8-inch cake or 24 cupcakes.

This frosting (I left out the salt) + straight dulce de leche + nilla wafers = awesome.I live in an area where Dulce de Leche is readily available. I just picked up an extra can just in case. The combination is so addicting. This may officially become one of my favorite Christmas cookies

Great cake, highly recommend. Tatyana is definitely right about the salt in the frosting. It is amazing but be careful not to add to much.

Hi Tatyana, I really enjoy your videos and recipes, but I wanted to tell you that in Argentina we use dulce de leche alone to frost cakes -- we never use it in a butrercream

Yes, home-made caramel will also work great! Just keep in mind if your caramel isn't as thick, you'll need to add a little more confectioner's sugar.

HELP: How far in advance can I make this? Meaning if I have an event on Sunday afternoon (late), can I make this Saturday night or afternoon?

Yes! This is great if you make it even a few days ahead of time. Keep it refrigerated and thaw at room temperature for an hour before using to frost :)

You're very welcome, enjoy! If you keep it in an airtight container, it should be good for a week. You can also freeze buttercream for 1 month

Yes, absolutely! Just let the cake cool completely, then wrap it in plastic wrap to keep it from drying out :)

Yes, this frosting will work great under fondant! Just make sure to set the frosted cake in the fridge first

It should keep well in the refrigerator for up to a week. You will need to thaw it out before frosting though; maybe a few hours at room temperature

You're most welcome! Yes, this can be frozen. Simply place it into a well sealed container. Buttercream can be frozen for up to 1 month. Thaw overnight in the refrigerator, then at room temp for 1 hour.

I know these are old comments, but I thought I’d comment anyway. I live in New Mexico and Dulce de Leche cakes and desserts are everywhere. Sadly, I’m not the biggest fan of it, but I do love a good salted caramel buttercream. Can you tell the difference between this and a buttercream made with caramel sauce? I’m definitely willing to try this!

Hi! I love salted caramel buttercream, too! This one is very similar, except thicker. I find that most caramel sauces will thin out the frosting so you can add too much caramel. With dulce de leche, you can add tons of caramel flavor and the consistency still stays thick and creamy.

Hi! It will be more stable once it sets in the refrigerator. I recommend frosting your cake/dessert and letting it set in the refrigerator overnight. It will be more stable for longer.

Is there any way to make this using French buttercream method instead of American? also, is it possible to make a French buttercream that is chocolate, but I mean DARK chocolate?

Yes, absolutely! Have you seen my French buttercream video? Do everything the same but exchange the chocolate with caramel sauce or dulce de leche. For a rich chocolate version, add both melted dark chocolate and cocoa powder :)

Hi.. I need to prepare door gift for a garden wedding in Malaysia.. So I was asked to do my Triple chocolate brownies but I'm not sure the cream... This recipe looks amazing.. I usually do my brownies with salted caramel as the topping but the bridegroom requested for cream... How long can the salted caramel buttercream last on the brownies? Like will it melt?

Hi! The buttercream should be just fine on the brownies. Just make sure to allow them to cool completely, then add the cream. If you're making it the day before, keep it refrigerated :)

You don't have to add the sugar but I find that it gives the frosting better consistency :)

дульче де лече и варёная сгущёнка - это совершенно разные по вкусу вещи. сварите банку сгущёнки, параллельно сделайте дульче де лече. затем попробуйте. я ручаюсь, что любой человек в состоянии отличить одно от другого.

I recommend using unsalted butter because you will have control over how salty the frosting is. If you regularly use a brand and you know it's not too salty, you can try...

I have noticed that after you frost a cake, I can see places of the cake not fully frosted.

Not really, I think the small pinch of salt really balances out the flavors :)

I'm afraid that wouldn't work very well, it wouldn't add the caramel flavor. You can also use my caramel sauce recipe for this frosting :)

TatyanasEverydayFood hi thx for replying.. i mean i’m trying to make milk frosting..and since i like the consistency of your salted caramel frosting (he taste is wonderful) I was thinking i could replace the dulce de leche with condensed milk. Will I get the same consistency? Thanks!!!

Oh, I see! You can definitely add regular sweetened condensed milk but I wouldn't add more than 1/2 cup so the consistency stays the same. You might have to add a bit more confectioner's sugar, too

I'm so sorry it didn't turn out perfect for you! You can also use my home-made caramel sauce for this recpe if you don't have a good dulce de leche.

It should not be grainy if mixed properly. Make sure to sift your confectioner's sugar if not using a new bag; it tends to clump together fairly quickly

I’ve halved the recipe and it obviously tastes great but a problem I’m running into is the buttercream doesn’t hold up at all. I fill about 20 macarons and by the end the buttercream is basically liquid and runs out of the macarons. Does this mean there’s not enough powdered sugar? I use about a cup and a half with the halved recipe

@@NNegativeCreep Hi! I'm glad you're enjoying the frosting. The melting buttercream indicates it's too warm. Try placing the buttercream into the fridge, let it set, then mix again. To keep the frosting from melting, work with smaller portions. The heat from your hands is melting the frosting as your working with it. Hope this helps!

I really don't recommend using salted butter for baking - it's really hard to tell how much salt the butter has since each brand is a little different.

No, the icing sugar will not melt in the buttercream. To avoid a grainy buttercream, make sure to sift the sugar before adding :)

You can also make your own dulce de leche using condensed milk. There are recipes online.OR you can order it online.

I just made it today. The frosting is AMAZING! my mom is not a fan of very sweet caramel (I am) and she loved it!!! The 1/2 teaspoon of salt makes a WHOLE difference. I suggest that while you add the confectioners sugar, try it!! until is perfect for your taste. However in my opinion the consistency and taste is perfect as is.
