I was thinking about that too. Perhaps it would work to use unsweetened almond milk with a tablespoon of white vinegar added to simulate buttermilk. And using plant based “butter” may work. It won’t hurt to try!

@@bhallmark3390 depending on the ingredients and manufacturer plant based butters can counting gluten. The stabilises and thickeners and flavourings are what contains gluten. Of course if you aren’t coeliac and you’re gluten free for other reasons, then it wouldn’t matter.

I am not sure why mine are so runny with the reduced milk cause no buttermilk.

Whole fat buttermilk is very thick so nothing really compares to the texture of it. However, you may need to reduce your milk even further if you're using a different flour blend or a low fat or fat free milk.

Anytime a recipe calls for buttermilk, I use half whole milk and half plain whole milk yogurt. It replicates the tang and the thickness of the liquid.
