@@dudessjoddie it depends on which language you mean ahaha! the “cc” sound actually depends on the letter you find next. In this case it is “I” so it is a “sweet” sound in Italian like in English you pronounce the word “China”. In the word “bocca” (mouth in Italian) the “cc” is pronounced hard, like in “thick” plus the “a” Italian sound. Hope this makes sense :)

How did you know that I’ve been thinking about making focaccia bread? When I was first married, we lived in a duplex, the owner, Dina was an elderly Italian who was absolutely adorable. She was a jewel. A retired seamstress, she would make her “gravy”, talk about when she came over on a ship as a young girl and as she showed me her photographs, many times standing in front of a “machine” (cars). She would call me and let me know she made us some focaccia bread. I always wished I had asked her to teach me her recipes. I love focaccia! It’s my childhood’s favourite! However, the bakery nearby stopped making it one day and I always wanted to ask what that is. Twenty years later I know it’s focaccia and I still can’t buy it nearby (need an hour drive) - NOW I CAN MAKE IT MYSELF 😭 thanks John!!

Thank you, John...this is probably the best bread I've ever made. Like you, I divided mine in half. I baked one in a round cast iron pan and the other in a 8 x 10 metal pan....they turned out awesome....takes some time but really pretty easy.

my dough is rising overnight as we speak! for that final tablespoon of olive oil on top i think im going to infuse with some fresh garlic and finely chopped rosemary for a couple hours so get some additional flavor. CANNOT WAIT to try it!

I loved how easy you made this recipe seem, so I tried it today. It turned out exactly like yours looked! My husband said that my focaccia looked and tasted the way it’s suppose to. It was beautiful, but didn’t last long because it was delicious!

I love focaccia bread! I thought this would be more difficult, I will definitely need to try this. John - can I make this for my gluten-free bestie with almond flour? What, if anything else do I change? I love 💕 your videos so thanks for all of them.

As a gluten intolerant guy, I would use a little xanthan gum, and gluten free all purpose flour ( or you could use a couple of egg whites aswell). There's some absorption differences and it might need 10% more water. But almond flour will help with the retention of moisture. But I don't think you could use just almond flour.

My notes on glutenfree foccacia: Add little less than half a teaspoon baking soda after flour Full packet of sweet dough yeast Poke after 30 min add more olive oil and let rise Chill in fridge about 40-50min bake at 225C for 20-25 min only do around 2,5-3 cups flour and 1 cup water And Yes it is ABSOLUTLY DIVINE

Super easy to make! I would just replace the dry yeast with the fresh one, which isn’t always easy to find. It will make the focaccia easier on digestion.

There is a recipe online from Inspired taste, they infuse thyme, rosemary and garlic in some olive oil and add it to the dough and then let it rise. It taste 100x better I love it!

I make this often, but make it thinner. We like it for sandwiches and I use a higher hydration dough to get bigger holes.
