Hello Becky you can also put an old plate on top of the pastry to bake blind, that's how our mums did it in the fifties, lovely pastry, thank you.xx

Second try at this and the pastry's consistency was fine BUT it didn't roll out as big as Becky's, which meant when I flipped into the tin (hard when my 'flipping hand' only has 2 fingers which work!) there wasn't enough pastry on part of one side to come up to the top of of the 9 inch tin. Next time I make it, I'll increase my ingredients to make more pastry & see if that helps.

I'm Greek, and since being diagnosed a gluten-intolerant, it KILLS me to not be able to make my favourite traditional Spanakopita with store-bought filo dough. I've never seen GF filo dough before, so I will try using this recipe to see if I can make an "open-face" Spanakopita. I'll let you know how it goes. FINGERS CROSSED!

Becky I'm so glad I found you been watching for ages and you are my go to. Hunni hope you don't mind me asking but iv had loads of test done as iv suffered for years with my tummy and toilet. Had a smart pill done and it showed my large bowel is not working and iv found out I can't eat gluten, dairy and loads more but I'm still waiting to see what is wrong. Iv cut it all out everything and yes my tummy is not as swollen but Iv still got bad period type pain 24/7 is this normal with ibs? X x can't to buy your book it will sit out all the time x x

Xantan gum sounds so disgusting. I don't eat pastry because gluten free recipes always have it.

It's in an incredible amount of foods, not only gluten free ones. You're probably eating it without realising.
