I love the grilled cheese I prepare at home. I use a sandwich type grill, which creates that seal diagonally across the bread as well as around the crust. This makes sort of like two pockets of really melted cheese. Biting into it is my definition of happiness.

I love Murray’s! The best grilled cheese sandwich I ever had was at a little stand in the Sawtelle neighborhood of West Los Angeles called Ketchie's. It closed in 1986 after it was hit by a truck or something and they never rebuilt it. The second best grilled cheese sandwich I've ever had was off a street cart in Madrid in 1983. I think it was made with fontina or manchego, some sort of excellent white cheese. But for grilled cheese I'm okay with good old sharp yellow cheddar or even American cheese. In fact, I had a grilled cheese sandwich for dinner tonight.
