I really like lemon flavor.
I made this delicious lemon cake in mini size.
Maybe you've made a lot of lemon cake, but keep this recipe ^^
I finished it after testing several times to get the moisture and tenderness.
It's not a Genoise method, nor a cream method like a pound cake.
It's a very simple method.
The ingredients are simple, it's really easy to make.
However, this lemon cake rewards full of satisfaction.
I baked it in a lemon shaped pan. You may find this pan online, so if you have a chance, try it. You will feel good because it comes out so~ cute.
If you don't have one, you can just bake it in a muffin pan.
Oh, and I recommend you to do the Sugar Glaze on them.
I've reduced the amount of sugar in the recipe, so it's not too sweet ^^

95g / 135g sugar
Soft flour 110g / 150g
Almond flour 30g / 40g
Baking powder 3g / 4g
55g / 75g butter
2 eggs (100g) / 136g
Cooking oil 30g / 40g
75g / 100g milk
Vanilla 3g / 4g
Lemon juice 13g / 17g
15 minutes in an oven preheated to 170 degrees (20-22 minutes for cupcakes)
