I agree . It's like when people cook beef in a cast iron skillet you can use the drippings to make the best brown gravy ever . Add a little bit of butter an onion . Cook onions for about 5 minutes on medium-high heat add flour and wait for the flower to turn brown before adding milk . Let it thicken and add salt and pepper .yummy

Dairy-free here. If anyone happens to stumble upon this video, drooling and reminiscing over the taste of a beautiful shredded sharp cheddar, this one works with dairy free alternatives! We used Oatly in place of whole milk, Silk Half and Half, Violife cheddar shreds, tofutti sour cream and some country crock vegan butter! Still a bomb ass soup!! Thanks for this recipe!

I absolutely love this recipe I have made it 5 times this month and eat it for lunch on my work days I use 1 cup of 1000 day aged Gouda and 1 cup of cheddar, and I put the bacon and hard cheese in when it starts to go through its 15 minute simmer. I add softer cheeses at the end where you said to. Today I'm trying it with soft Gouda instead of cheddar. I have also made it with beef broth instead of chicken broth and it's still tasty

Thank you so much! A personal opinion of being all in. I fry up all veggies including potatoes, onion, celery, carrots, and garlic cloves all at once. then I make my rue with them. I use chicken, ham, sausage, hot dogs whatever we have on hand from a day or two before because we don't waste food. Not with this economy and growing teens! Don't forget Ambrosia and Jello-fruit cocktail deserts! We will make it through this! Great recipe! Thank You!
