I’d like to try the enchilada mix. Make it heart healthy without the tortillas and cheese and put it on a bed of lettuce. And make it a taco salad.

You are such a great homemaker! A rare and amazing kitchen wizard. I have been making your pizza sauce and crust for a few years or as when you first posted it. We are kindred spirts as I can eat Pizza several times a week with no problem. Living in the south now it is almost impossible to find a good one. So thanks to you and a Lodge pizza stone I have it down! Will be making your enchiladas this week. They look very tasty and I like the addition of the veggies. Italian sandwiches look great but I am not sure about the pepperoncini. Used once before in that Mississippi roast and thought they added heat. Thanks for the great video. Stay well!

Delicious looking but I think they are burritos. Enchiladas are made with corn tortillas and a filling of chicken, beef, cheese , or both.

Great recipes!! I make a similar roast but I do not add in the Italian dressing. I use the whole jar of the peperoncini and add in about 3/4 block of cream cheese. We call it pepper jack roast because it tastes like pepper jack cheese!

I just gotta say that you are brave to wear white while cooking with red sauce…I’d have red polka dots all over my top by the time I was done.
