Ingredients
Bread flour - 150 gr
Water - 85 ml
Oil - 10 ml
Butter - 15 gr
Yeast - 2 gr
Salt - 2 gr
Sugar - 3 gr

Thank you all for watching this video. You guys are great!!! Now, a few tips to help make this successfully first time. Please use bread flour. Mine is King Arthur with 12.7% protein. That’s why you see the dough so stretchy. It has a lot of protein so more gluten. Place on middle rack. Fleischmann’s rapid rise yeast. Knead time 3-5 minutes. It’s a crispy recipe. Best eaten right out from the oven. That’s why this recipe is a small batch. Next day won’t taste as good since it’s a small piece of dough and dries out easily. Can double recipe if needed. I made these tonight! They are so stinking cute! I used a high gluten flour (~14% gluten) and so had to use about 10 ml extra water and a little bit of extra oil to make my dough as elastic and well hydrated. I eyeball cut my pieces and ended up with about 15 mini rolls. These rolls disappeared in less then 20 minutes. I grabbed the last one and made the cutest roast pork banh mini with all the fillings and my daughter staged a doll photoshoot eating a banh mi and coffee!

Hi! I’ve been watching your Banh Mi recipe video and love it. I will try it this weekend. I want to make these little ones for my kids as well. One question, do you spray these little Banh mi with water before baking as well?

They are so small you really don’t need too. If you like more crispy then use the Banhminis video. If you prefer softer bread use my newest recipe and for both, large ones and mini ones. More convenient that way 😉. Let me know how you like it 😉

Yes, just make sure you knead till it gets elastic. Might have to adjust flour a little bit since it absorbs less water. 😉

The oil is from my hand and the counter surface to work with the dough easier. I did not add any to the actual dough itself.

You don’t have too. They are very small. Spraying water will make them too crispy and hard. No water tray needed as well.

Bread flour or flour with at least 12.7% protein for the best results. You can try AP, but can’t guarantee outcome.

Aimee what about the ingredients quantity, you left it out also it does not need to be water spryed?

Ingredients are listed in the description box. I did mentioned in the video to spray water in the final rest after making the slashes but as far as spraying with water while baking, that’s not necessary. It’s a very tiny bread. Spraying water will make the crust super hard. 🙂

I have tried this recipe at least 6 times already and each time the dough does not rise during the second proofing. The dough does not bounce or rise as shown in your video. Not sure what I am doing wrong. I tried your other bread recipe and it turned out great. It’s just the mini one that I am having problem with. The dough is also not stretchy like yours. It rises the first proofing and it does not rise during the second proofing. It even collapsed a few times when I tried to slice it. Please help!! What am I doing wrong??

Ok to wait about 30 minutes and pop it in the oven. It’s a very small piece of dough, you won’t notice a substantial increase in size. It will expand a little more when baked.

Hi Aimee, i tried this and right off the bat the dough is dry and doesnt blend well. I use room temp butter cause i guessed it, you didnt specify. I add a bit more water and they come together but not shiny and stretchy like yours. They didnt double after proofing twice the time too. They are firm like bread dough i did before. They come out dense as expected and once they cool down the outside gets hard. My bread flour doesnt specify its protein content :(

You can refrigerate the dough and bring it back to room temp, let it rise, shape, and bake. 🙂

Aimee's "Banhmini" Recipe Ingredients 150g (1 cup) bread flour 85ml (1/3 c and 1/2 tbsp) water 10ml (2 tsps) oil 15gr (1 tbsp) unsalted butter, room temperature 2gr (a little less than 1/2 tsp) instant yeast (Fleischmann's bread machine instant yeast) 2gr (a little less than 1/2 tsp) salt 3gr (a little more than 1/2 tsp) sugar 1. In a bowl, whisk together dry ingredients. 2. Add unsalted butter and water and whisk until combine. 3. Pour batter out onto a clean, dry surface and knead until dough forms into a ball (about 3-5 minutes). The dough should turn out elastic-y. (See consistency at 4:35). NOTE: Use steady pressure at first and lighter pressure once a ball forms so you do not "tear up the gluten you previously form." 4. Form dough into a ball by folding it out and under itself. (See 4:37). 5. Grease a bowl with oil or butter AND the top of the dough ball. Place the ball into the greased bowl and cover with plastic wrap until doubled (about 25-30 minutes). 6. Once doubled, poke the dough. The indentation should not bounce back and the dough should be very stretchy (See 5:03-5:18). 7. Form the dough into a log, deflating some of the air. 8. Divide the dough log into 13gr pieces (say about 2 inches- see 5:35). You should get about 20 banhminis. 9. Shape the dough into small balls by folding the the dough inside itself. (See 5:49). 10. Cover the balls with a tea towel and rest for 5 minutes. 11. Shape the balls by rolling them out into a rectangle and rolling it away (or toward) you while flattening the ends to create points that will be the end of your banhminis. (See 6:30-7:00 for Aimee's process, and 7:01-7:15). 12. Place all the banhminis onto a baking rack (baguette pan if you have one) to rest, uncovered. The dough should be dense. (See 7:24). 13. After resting for 15 minutes, use a razor and score the top of the banhminis. (See 7:41). 14. Spray the scored dough with water and cover with tea towel to rest for 15-20 minutes. The dough should be soft and bouncy to the touch and appear to be very airy. (See 8:05). 15. Bake at 375 degrees for 20 minute or until golden brown. Every oven is different, you can start at a lower temperature (about 5-10 degrees lower than 375). Finished product at 9:05.

Your recipes look great but you need to put the measurements in cups, tablespoons, teaspoons, etc. Some of us are not good at converting, even with the help of google.
