IT'S SUMMERTIME, PEOPLE. This dish is for those of you that are trying to get more veggies in but you also love-a-some-a-pasta! Those of you that have FRESH tomatoes at your disposal, those of you who have friends/ family coming over for dinner and you don't know what to make for everyone, for those of you who don't know what to feed non-vegans! It's also for those of you who want to halve this recipe and make yourself a delicious dinner!

INGREDIENTS:
4-5 servings
10 ounces spaghetti
2 roma tomatoes, diced
½ red onion, diced
1 15oz container baby bella/crimini mushrooms, chopped
¼ cup chopped basil
½ cup chopped spinach, leaves only, washed and chopped
3-5 cloves garlic, minced (depending on how much garlic you like)
¼ cup olive oil
Juice of one lemon
Salt & pepper to taste
1 tablespoon chili powder
chopped fresh parsley, to garnish (optional)
Nutritional yeast, for serving
Optional:
Sun dried tomatoes
Protein Add-On’s:
Chickpeas 7g per ½ cup
Nutritional yeast 5g per 2 tbsp
lentil/ chickpea pasta - 15g per ¾ cup

I'm not fully vegetarian, but I eat a lot less meat these days. If it's delicious, doesn't need meat to be delicious, and has all the fat/protein requirements, annnnnd is less expensive without adding animal protein, then I'm down 🌱🌱🌱🌱 More plants, better health 🙌

@@MerleONeal ok, so I did make this yesterday. I ended up using a high protein mung bean and edamame fettuccine. I was initially not into it as I thought I would be. I don't think I salted it enough and there was just something missing. I ate the leftovers today and somehow when I knew what to expect, it was BANGIN'. I did add a little more salt which helped, and then about halfway through I thought to sprinkle on a little vegan feta and that really made it for me. I think next time I'll add some slicked black olives too. sn: I'm also kinda proud of myself for adding the mushrooms. I really really really don't like them but really want to. I decided to add just a few and I chopped them up really really tiny and that totally worked :)

One of the main concerns about eating certain mushrooms raw is the carcinogenic compounds they contain when they are raw. Common button mushrooms also contain it. Portabello mushrooms, and shiitake mushrooms all contain things like hydrazine and their own form of formaldehyde. Research shows they are heat-sensitive, which is why they recommend to properly cook those types of mushrooms. Theoretically, you won't get noticeably sick if you eat them raw, but that isn't to say it isn't having a negative effect you are not aware of.

Tried this recipe today, fantastic! Really tasty! I include some dairy in my diet and I make a mushroom carpaccio with thinly sliced raw mushrooms, parmesan, olive oil, salt and pepper. So simple and sooo delicious. Keep it up, Merle!

Love the recipe! My only question is that I've never seen round Roma tomatoes before. Usually they're oblong. But yes, I've eaten raw mushrooms plenty of times - just not after I've had them in the fridge for a while! :)

I love this! I actually do a similar thing during summers, usually with tomatoes, cucumber, onion, garlic, basil or cilantro, black olives, canned chickpeas, green peas (thawed from frozen, but no need for cooking,) salt and pepper, and I use vinegar if I don't have lemon juice, and olive oil. I use rotini or tri-color rotini pasta, which holds more of the sauce in, and I can eat it with a big spoon to get more veggies with each bite. I practically lived on this stuff in college because I commuted to school, and didn't want to blow all my savings buying food at the school all the time, as I was stuck there all day.

Looks so yummy! BTW everybody, raw mushrooms can be wonderful, fresh additions to main dishes and also sliced up for any raw veg tray served with dip! I've had people laugh at me or tell me I'm wrong for eating raw spinach or kale...grain of salt toward those opinions. Great recipe as usual, Merle! My only concern was for your pretty white top getting stains -- that would happen to me! :)

I tried the roasted pepper pasta last week and thought it was great. I’m gonna do this tomorrow on the 4th but since i’m not vegan, i’m gonna add some feta cheese. We have an overabundance of cucumbers so will probably add those too. Who thinks you shouldn’t eat mushrooms raw? That’s a new one for me.

This is basically Tabouli, but with pasta instead of bulgar. So smart! And super healthy 🙌 I think I'd just add tahini for a creamy nutty hit.... but that's just bc I'm a little sl** for tahini 😈

I’ve made your short form version of this pasta and I really liked it! But do you have any recommendations for upping the protein if you’re allergic to legumes? I’m not vegan btw cause that would be almost impossible with my allergies

I follow the starch solution but see you use oil in your cooking. I know this helps with flavor. Have you lost weight with this woe? Would adding a little oil impact weight loss?

I feel like I would want to at least sauté the spinach, mushrooms and garlic together, I’m not a fan of raw mushrooms lol. Other than that the recipe looks really good and refreshing for summer!

the pasta water actually cooks them down a little bit, don't knock it till ya try it! You can def sauté if you want, it's more in the interest of less dishes and less hassle

as a mushroom forager, i personally wouldnt recommend eating any mushroom raw! even though a mushroom might be an edible variety, generally speaking all raw mushrooms can have toxins in them that are broken down by cooking them

A well. Store bought mushrooms are fine. But you NEVER eat foraged mushrooms raw. Why? because many of the edible ones are only edible after cooking. Also snails love mushrooms too and they have lots of parasites and you dont always see the dried slime. Store bought mushrooms are grown in a sterile environment and and are varieties that are suitable for eating raw. But for the category "mushroom" it's misleading.
