After watching a zillion videos on cooking a prime rib I decided on this recipe because it looked easy and I liked the way the roast looked when you cut it open. Everyone loved it! The only thing is, I was not sure how long the roast went back in the second time with the oven on, so I opted for 20 min. and then let it rest 1/2 hour. It was great. I don't even think it needed the extra 20 min. so next time I'll skip that part. It turned out medium and very tender but if I want it a little rare it does not need the second time with the oven on I think. Thanks!

So glad it worked out for you! I also think it depends on people’s ovens. Some doors don’t seal as well, might let out warmth quicker than others.

Hi Flo, Your recipe is very similar to the one my grandmother taught me, and that is my oven gets set as high it will go, usually around 550. Put the roast in the oven and let it roast for about 40 minutes and turn the oven off, and leave closed for 1 hour. Serve.

I do this about the same way, but at the end while the roast is resting I turn up the oven to 500 and let it heat up. after about 20 minutes I put the roast in the oven for 5 minutes to really darken the bark of the roast, not burn it, but really gets it crispy

Hope you'll try this easy recipe for the best prime rib! Because this roast was so big and my family like different doneness, the roast came out medium on the outside and medium rare in the middle. If you want to get more rare in the centre and throughout, buy a smaller roast (4-5 lbs) and just take the roast out around 120 degrees F.

I came from a butchery family and that’s exactly how my mum cooked that joint, best jiontof beef you can get for taste and quality,The key is to make sure it’s hung for a least 24 days or more.

Suggest 500 degrees at five to six minutes a pound, depending on medium or midium rare, than an hour and a half staying in the closed oven. Same color all the way through, doesn't get so much of that dark gray ring on the outer part of the roast.

Just wanted to give you an update... I now cut off the bones and tie it back up with kitchen string. This will form the meat into a round log allowing it to cook more evenly. And when it's time to slice, you can easily remove the bones and slice away!

I probably paid about $125 for 8lbs. I can get a 2 rib prime rib weighing about 3-4lbs for about $50 from Costco. I'll have to double check the per pound cost next time I go. But it is definitely not cheap which is why I love that this recipe is perfect for me.

Should try dry brining the roast. Really takes it to a whole new level. Don't even need the butter or other seasonings.

OK a couple of things.1) you didn't put anywhere near enough salt and pepper on your roast. That was a big piece of meat and will need more seasoning.2) Instead of cooking the roast at 350 for a hour and shutting the oven off Cook the roast at 250-275 for at least 4-5 hours and let it rest for an hour with the aluminum foil tent on it. 3) You also left a lot of juice in the cooking pan. Instead deglaze the pan with some red wine and add a little flour and butter to make a nice gravy.

I dont think you let it sit long enough before you cut it. Also you might want to start at a higher temp to get more of a crust all around.

as I was watching this video I was salivating. The crust on that was perfect. The inside well maybe just a little tiny bit overcooked but it still looked great. Nice job on that roast. And now I'm hungry. LOL

3 hours at room temperature for uniform doneness... Bake roast 5 minutes per pound @ 500° F, turn oven off, leave in closed oven 2 hours. Remove from oven, slice & serve with fresh horseradish sauce.

Hey Flo, There is another way that requires less time. Preheat to 500, cook 5 minutes per pound (8 pounder takes 40 minutes) then turn off oven, and again no opening door, for 2 hours. Then it's done after standing for 5 minutes.

We bought three different weights of rib roasts after the Christmas holidays at Foodarama in Houston for $ 3.99 lb. and went to HEB the same day for something else like BEER and they had better looking roast already seasoned for about the same price so we got another one and ended up having that one for dinner. Today I'm cooking our last one and I'm trying the room temp. method @ 500 deg. for approx. 5.0 min X 4.67 lbs = 23.35 min/sec rounded to 25 min. for heat loss after opening oven door. and turn off and let set for 2-hrs. also making a butter herb rub and using some Adams Reserve Rib, Roast & Steak seasoning for added flavor came out pretty good last time, we'll see how it comes out, enjoyed your video Flo, awesome color on that roast sounds like you guys had a good sized crowd to feed, lol {=^O Thanks~James.

Never mind the 3 hours or whatever, slow roast at 325 from scratch until 125 or so. Make sure it wasn't previously frozen and leave it on the counter for 3-4 hours. Your seasoning and prep were good. The people that want it well done, let them go to McDonald's

I followed your recipe for Christmas dinner and it was great. We bought a small cut from Costco. The ends were medium well and the center was perfectly pink. Just out of curiosity, I paid almost $11 a pound (Honolulu). What do you pay in your area?

I'm not sure of the price per pound but I pay around $50 Cdn for a 2 rib approx 3-4lb roast. It's a pricey piece of meat, that's for sure which is why I love this recipe. So glad this worked out for you.

I usually do a 7 bone prime rib, high temp then, low and slow, not complaining but it did look a little to done, and the meat should rest for at least 20 min. to distribute the juices, 10 min. is not long enough. also many cooks recommend leaving the roast out 2 to 3 hours to get to room temp. also you should cut some slits and put garlic cloves, gives it a really nice flavor. this one did look medium well, by the time you dip it in hot au jus your going to have a tuff piece of meat.

One of our favourites is the Cilantro Lime Chicken: kzbin.info/www/bejne/nofPp2tnhL1-i6M It's a good one to start with since there are only 4 ingredients and if you like Mexican flavours, I think you'll like it. Looks delicious! Just wondering if your beautiful piece of beef roast was graded by the USDA as “prime”? If yes, then your roast would be considered a Prime Rib; otherwise, I believe it’s called a Rib Roast. About how much was the price per pound for the piece of beef?

No USDA in Canada and it was probably about $25.99 per kilogram.

we have a self venting oven so im unsure about the letting it rest 3 hours.if the wife and i use this we will use veggies and broth under the roast.booby flay uses alot of salt but removes it .but he had a really fatty roast

@@jonwoll6586, two good methods are... take the exact weight of your roast, and multiply by 5, that's how long you put it in the, set at 500 degrees. When that time is up, you turn off the oven and let it sit for 2 hrs. Second method, again follow above instructions but instead of shutting off the oven, you turn it down to 325 degrees and check temp routinely until desired temp, 120-125 for rare, 130 for medium rare. Once you have the temp, pull out of oven and let it rest anywhere from 15 to 30 minutes. Temp will rise a few degrees while resting

Ignore the food snobs. If your family likes a wide range of "doneness" it is perfectly okay to cook it a wee bit longer for them and give them the outside pieces. It will still be rare in the center.

Cut the roast from the rib rack. Place the roast back on the rib rack to cook. Add garlic and onion powder with rosemary and thyme to your seasoning. Salt and pepper alone is not enough flavor. Remove the prime rib from the rib rack. Slice and serve.

Food Wishes has a similar approach. Hot at first, then low and slow. Pink perfection, all they way thru. If you want the roast beast that the Grinch carved, check out Food Wishes. No grief to this crew, but a pink through and through is what I wish to do... Sam I am... (There is a little math, but it's worth it...)

The longer you cook beef,...the tougher it gets,...so just on the pink side,..will be nice and tender,..juicy,...and not tough to chew....try it...!...you'll understand when chewing it..!!

Garlic may burn. You can smash garlic, make several slits in the meat and stuff the garlic cloves in the slits.
