Cakeshare, my recipe for the raspberry and hazelnut tart! ASMR

PIE:
75g butter
40g sugar
1g salt
30g egg
10g cocoa powder
115g cake flour
25g almond flour
RASPBERRY JAM:
70g raspberries
15g sugar
HAZELNUT CREAM:
80g butter
80g powdered sugar
80g whole egg
80g hazelnut flour
RUM SYRUP:
30g water
30g sugar
5g light rum
RASPBERRY GANACHE:
50g fresh cream
100g white chocolate
25g raspberry pulp
Red food coloring
DOSES FOR: 6/7 PEOPLE
TART MOLD DIAMETER: 16 cm
N.B: it may seem complicated to replicate the aspiral with the ganache but believe me it is enough to have a steady hand and continue to turn the cake turner, do not be wrong because this is the first mistake!
Let's move on to the various preparations. By now you have seen the shortcrust pastry in all sauces, the procedure is very simple, just remember the rest times in the fridge.The raspberry jam is actually a fake jam, cover the bowl with plastic wrap and make sure to close it well. Be careful not to leave it longer than 30/40 seconds or it may come out. The hazelnut cream does not foresee major difficulties, the eggs must be inserted 2/3 times to ensure correct absorption. I recommend putting the pastry bag with the cream in the fridge, if it remains at room temperature (especially now that it's hot) the mixture could divide. The ganache is perhaps the most complicated part because the consistency must not be too hard or too soft, I have given an indicative time of 2 hours but if you see that the ganache is too soft then leave it a few more minutes, vice versa if you see that it's too dense, spend a few seconds in your hands. If desired, the ganache can be whipped so as to give a more frothy effect, I gave it a light whipped by hand but this step can be omitted. As I said before, don't be afraid to make a mistake when you make the spiral, once the cake is made it must be kept in the fridge and then decorated.
