I made tahini using your recipe and have tomatoes from my garden so I'll be making the Piyaz today as a side dish for fish which I thawed and need to use up. On my recent visit to Singapore, I went to a Turkish restaurant at the Arab street and had Iskendar kebab. It was not as juicy as Sish kebab, but with freshly made yogurt and bread it tasted very good. I would love to watch the Turkish Iskendar kebab recipe sometime. Take my love, Refika.

You can use pork instead of lamb but you should reduce the amount of it comparing with lamb because pork meat has even more fat than lamb. Already Turkish kebabs usually prepared with pork in Balkans

@@historybugs We use a blend of minced beef and pork routinely whenever mince meat is called for. But the idea of using a little bit of minced lamb is an interesting one.

A portion of lamb meat usually added to almost all minced beef dishes in Turkey because of extra flavor and fat it provides but pork also does the similar job. The only difference is that the pork meat is even more fatty than lamb, so you have to be more careful with it to not make it overly fat

Dear Refika, when we were in Turkey many years ago in a three star hotel with five plus star food as a snack they gave us probably borek with spinach and some kind of hard cheese, it was delicious, I do not know how to replicate it at home. We also ate some kind of very thinly sliced salad with tomatoes and cucumbers, also delicious, served with everything, as well as tomato soup like nowhere else. Maybe you could shine some light on how to make these dishes? I would love to make them at home and I trust no one else. Greetings from Germany.

What a wonderful new dish to learn (as a non-Turkish cook). I notice that some people are looking for dishes that can be done fast fast fast. Then there are people who love to cook and are happy to devote appropriate time to that activity. There seems to be a sizeable difference in these approaches to cooking, and I don't know how to please both types at the same time. I am one who loves to cook and finds it stressful when someone tries to rush me through the process. Yes indeed, there are times when I have to hurry too, but I wouldn't try to make a dish like this. I'd stick to something like ramen, omelets, or hot dogs.
