Delmonicos is by far the best.. you can't beat that ribeye. There is a reason that a thick trimmed ribeye is nickname a Delmonico.. the other 2 can't compare because they had porterhouse steaks and most of a porterhouse is sirloin strip. You can't tell me the sirloin is a better cut than a prime ribeye..
@nicholasmiglino72994 жыл бұрын
I’ll take the Porterhouse any day of the week
@drewcliff824 жыл бұрын
Dry aged ribeye is by far the best steak. It has just the right marbling, is very tender and if it's the right thickness, you can cook the perfect steak. You are correct that porterhouse, T bone, cowboy steak or what ever anyone wants to call it is a strip steak on one side and a filet on the other. The issue is that a strip steak has to be cooked differently than a filet. Strip steaks are too firm and the lip of fat is too chewy. I've been cooking steaks for 23 years now and ribeye and filet are by far the best. The only time I dont mind a strip steak is if its wagyu .

Based on prep, cooking techniques and quality of marbling. Delmonico by far. Any real steak person knows ribeyes are the best all around cut. It’s got the most marbling and is more tender than everything else minus the filet. That steak they were trimming was top tier PRIME. Could actually pass for some lower grade wagyu. The fact that they use a special blend of pepper and not just regular old pepper is nice. Also the coating of wagyu beef fat and butter brings that steak to another level. The only thing that possibly could have been better is if it were dry aged instead of wet. I did see they offer dry aged as well tho. If I ever visit NYC this is where I’ll be going.

I've said it before and I'll say it again, Peter Luger is the epitome of a "middle-class fancy" tourist trap. Their broil, slice, broil cooking method produces laughably inconsistent results. For proof, pause the video at 10:01 and look at the ridiculous temperature/colour gradient on the bottom right slice: the top half and left vertical edge/right tip are well done while the bottom half (excluding the left vertical edge/right tip) is rare. I fully understand that with certain cuts like a T-Bone/Porterhouse it is hard to get perfect results every time but if you are 'premium' steakhouse you should generally be able to do a much better job of achieving a uniform internal temperature and colour...

While I agree with Keens and Delmonico's, for a TRUE NY experience try Old Homestead Steakhouse on 8th Ave. May not be as fancy but you know something, it's a great time and experience.
