That's a great question. I wanted the juices from the strawberries to act as a kind of syrup and soak into the cake layers. If I spread the frosting first, the berries would just sit on top of the buttercream and eventually start seeping out the sides. Whenever you have a fruit cake, it's best to add the fruit directly onto the cake, then frost the next cake layer and invert it. :)
