A tip that I have been using for 40 years or more is to not use a knife to cut your roll circles but to take a piece of dental floss slide it under the cinnamon roll log and using both sides of the floss, pull each side to the opposite side so that it cleanly cuts the dough into circles. You can also use dental floss to cut a cake with no messy knife. I have been making homemade cinnamon rolls since 1965.

You can use a knife as long as it’s a sharp serrated blade. It cuts without pressing them down.

I just made this wonderful recipe, and they turned out delicious. The dough is so tender and light that you only need a little drizzle of your favorite frosting, so the sweet dough is the main attraction. I'm not typically a Baker, so my son came out of his room (shocker) and followed his nose to the kitchen, and we had a nice moment together eating the cinnamon rolls.

My mother worked in the high School lunchroom for our whole family of 11 kids. When I was going to high school along with some brothers and sisters they had a morning breakfast. In that morning breakfast they offered cinnamon rolls and they were massive! Your cinnamon rolls remind me of that time in my life that I took for granted. A time when there was very little to worry about and good food was always around me. Today, watching your video I get a little sense of peace and comfort. My mom is still around and so is my dad and she'll be 83 this year I think, not 100% sure. God bless you ma'am for all your service and all your work. When I was growing up in school, we had homemade meals , lunches everyday. We never had anything else, including these rolls. If memory serves. We had chili as the main. We had 4 cooks fixing food the the school. This was the norm all states and schools. Just heard you say with chile😇

@@janicemcguire5839 She is probably using a KitchenAid mixer. You can buy them at Kohls, or even off of Facebook Market Place sometimes. Amazon sells them too. There are a number of places you can find them. I've had mine for years, but I have a stainless steel bowl.

@@krystled7048 That is how mine were but I started adding some mashed potatoes to it, they stay soft. I use a amish recipe, but I think you could do it with any recipe. You cant use instant potatoes.

Oh, my! Those look delicious. Reminds me of when my kids were in school and they loved days when they had chili at for lunch because the lunch ladies always had huge cinnamon rolls for dessert. The lunches have changed over time and sadly there are no more cinnamon rolls at school. But they live on in many happy memories.

Don,t cas u will eat 3 and gain a lb. I made oatmeal cookies and ate.all but 3 . I put brown sugar and date syrip in them. 1/3 C coconut. No sugar coconut . C.a flour, 3/4 C oats. T.vanilla. Ky littlevoven fried em thob. Push bake i goes ron375. Too hot. Oops. My lil multi func counter oven. It has no light. I gate online shopping . Wmazon n their confusing descriptions . I wish it would go out of biz qnd we got stores back

My momma made cinnamon buns for years. I loved the smell that permeated the whole house on baking day. She never melted the butter that she spread on the dough but just used softened butter we would spread over the dough with our clean hands, then the brown sugar and cinnamon and walnuts. I grew up in the suburbs around Arkansas and I had a close friend that had some land and a form right on the border of the city. Anyhow these people remind me of you guys. You remind me so much of my mother... She also had this calming voice and had so much patience when teaching me to do stuff. You see, we are 5 children and I was the last one.. 10 years late. She was 48 and my father was 50 when I was born. So, come to think of it, I don't know how she had that calmness and patience teaching me everything she taught my siblings...but I think I've turned out quite alright... Your cinnamon rolls look amazing. When I was pregnant with my last child I had one everyday working at the restaurant I had them fresh out of the over. Gained 58 pounds from that sweet goodness.

My OB doctor would have had a fit if I gained that much weight when I was pregnant. 20 pounds was his limit!

@@lem4100 yep mine said the same thing. I had no where to live. 2 girls raising by myself. 3 year old and one year old and pregnant with my son. Left their dad because he was trying to kill me for the $50,000.00 life insurance I had. Could not live with my parents because of my dad molesting me as a child and I needed to protect my girls. Stress had me in. I guess it was comfort food. I'm loosing the weight and I have a husband that never raises a had to me and takes care of All my needs. I am happier now. Things are looking up.

What a great idea...proofing the dough in the microwave with a tall glass of hot water to provide warmth. If I never learned anything else, this idea was so helpful in my drafty old kitchen. Thank you!

I just tried it but had instant yeast (I never mk dough now I remember why), and it didn’t bloom and the dough was tough, didn’t rise and I threw it out. Idk if I should try to throw the instant yeast in w/the dry ingredients and not bloom it like some other bakers say or what but I’m so mad. What a waste of time and money. Any suggestions on the instant yeast ? It’s all I Hv right now but it does proof when I test it. It just didn’t work with the milk etc

Try warming the milk to 110 degrees and adding 1 tbsp of table sugar to it and stir, then put yeast in and see if it will bloom that way

Thank you for the tip about using the microwave with the hot water to proof (I say rise 😅) the dough. I usually use my oven when my home is on the cooler side, but the microwave will work better.

I just love how relaxing your videos are to watch. I gravitate toward the lunch lady sheet cake pan recipes because those were what I remember fondly from my days in elementary school (64 years ago). I made your dough today for cinnamon rolls and they were amazing!! I add some heavy cream to the pan before throwing them in the oven. I also added crushed pecans to the top with brown sugar. My icing was cream cheese with powdered sugar and heavy cream. TO DIE FOR!!!

Yes, I have used all those things. I also make donuts, sweet, salty, garlic dinner rolls, danishes with any of those fillings. I've even made sandwich bread from this dough. I use dental floss to cut mine. Love your videos.

Baking cinnamon rolls now - with lightly cooked bacon rolled in them! (Idea from Steve Doocey) Added a little maple syrup to the icing. You always get me in the mood to cook.

That is an absolutely brilliant way to proof dough! I am constantly worried about the temperature and humidity when I’m proofing dough, I drive myself bonkers. This method will eliminate my nonsense anxiety while proofing, thank you for that(guessing you didn’t realize that you were also administering cognitive behavior therapy 😊)! I am definitely going to try this dough, I adore cinnamon rolls but have always found the dough I’ve used is too savory and drier than I want in cinnamon rolls. Thanks again!

The first time I listened to this, I knew there was something I wanted to comment on, but by the end I forgot… So I re-watched until I got to where you were talking about cinnamon rolls and chili at school. Our cooks made that meal too, and it was so delicious! I wish all the kids could experience that good food at school…

So if anyone out there is wondering if this dough is as great as she makes it seem, let me clear that up: this dough is a-maze-ing! Unquestionably the easiest dough I’ve worked with in the last 35 years, and as far as forgiving is concerned-I completely forgot to actually knead it, it’s still perfectly mixed, soft, easy to roll out, and proofed beautifully. Definitely a keeper here, thank you Lori for sharing!

Just came back to say I made these again this morning-I’ve been craving them for a week now. This is an amazing and forgiving dough, not to mention easy and no fuss or crazy techniques. If anyone thinks blooming yeast and separating eggs is too fussy or difficult they probably need to get out of the kitchen. LOL. On the first proof now, sooo looking forward to the house smelling wonderful as these bake and of course doing a quality and safety check on one while still warm out of the oven. I mean, that’s the civic duty of the cook right? Can’t be serving anything below standard, and if it takes two of them for me to be certain, well I guess I’ll just have to eat two. 😹😹

Mr. Brown is a man after my own heart. No nuts or fruit in cinnamon rolls 😀. I can still remember my mother letting her rolls rise on the clothes rack over a furnace floor register. Good memories 🫠

I love how simple this recipe is! I found this video too late in the day to cook them, so after rolling and placing them in my baking dish, I let them ferment in the refrigerator overnight. Got them out this morning and let them warm/rise for about an hour before putting them in the oven. They turned out GREAT! I added some chopped walnuts to the icing, SO good!

Thanks so much for this recipe. I just made these for the first time. I put some in the refrigerator right after I cut them and will bake them for Valentines Day tomorrow. I baked the ends for myself just now to give it a try. Oh my gosh these are so delicious!! With the extra filling on top, I'm not sure we even need frosting. The dough is just perfect. So delicious!! I'll definitely make this again.

It's always nice to see someone else getting an inordinate amount of satisfaction from a good bread dough.😄 There just isn't anything else that quite compares; my favorite part of the process really is turning the dough out of the stand mixer bowl and kneading it. Yeah, my arms and hands might get a little tired, but it's so worth it, feeling that dough come together into a silky smooth ball lol. I often substitute half of the all-purpose purpose flour in bread recipes with bread flour, depending on what I'm baking. And I have to agree - although I love cooking, baking is what I REALLY love to do. Much love to you, Miss Lori, and thanks so much for all you do and for sharing it with us!

Looks so yummy. It has been a long time since I made homemade cinnamon rolls . Last time I actually made homemade blueberry buns :) We had high winds here that knocked our electricity out for a full 24 hours. We bought a big generator that will supply our whole house after last years snowmageddon here in Texas so we were able to use it for the first time and it worked great .
