@@thotslayer9914 Not really it's only about 800-1000 yen which is roughly 8-10 dollars since ramen is considered fast food in Japan, it's cheap and convenient to eat
I am tasting with my eyes. It looks delicious. I may never get to visit Osaka but I really appreciate the loving care given to making each dish. I wish we had Udon shops in Texas.

I watched this video again today, and noticed that the udon noodles at this restaurant are about twice as long as those seen at most other Udon restaurants. Everything looks good and delicious! From my personal experience, it is very difficult to find an Udon restaurant (or any kind of eatery, for that matter) in Japan that disappoints -- either from the food quality or the service.

@@Mr.Scootini There are authentic udon noodle shops in the US, (especially in the bigger cities), but from what I've seen, they don't use instant noodles nor make their noodles from scratch in-house, but buy them fresh from noodle suppliers. And prices are generally higher than in Japan.

Actually restaurants in Japan go from like 5 am until 11 am to prepare the food that is used the same day after that they go on a short break and the restaurant opens at 2.30 pm until 11 pm usually.

The efficiency, concentration. The division of labor. I think that's why they are working smoothly. It's just the two of them who works in the kitchen from start to finish. So great!

I'm so glad I had a Japanese friend as a kid, or it would've taken me forever to learn about udon, my long standing favorite noodle...and I'm part Italian!
Of the food preps all over the world that I've seen on KZbin, I must say that Japan has been consistently the cleanest and most dedicated to (as well as improving) their craft, and thus for me, the most desirable and most confidence inspiring places to take a risk in trying anything new. Well done, Japan!

This video is so prosaic. The staff are all great, they know what to do and just got on with it. That woman is the engine of the operation, look at her go during service!! The wait staff knows how to present the food properly. The kitchen is clean and organised, after use everything is put back where it should be. The noodles looks AMAZING!! There’s so much dedication to what they’re doing and the product. I just can’t help wonder, with the stomping on the noodle dough, how compliant that is to HACCP. I love these videos, I love watching these people so dedicated to the foods they produce.

The udon is typically put in a ziploc (I didn't watch the vid yet) and I've tried it before. Put on socks, put it in two ziploc bags, and stomp

I was going to say a commercial stand mixer would do the same job and then I remembered how tiny Japan actually is, so this might be the most efficient in terms of space/electricity/waste/cost, and stomping is hardly physical labor. Food safety might be hard to address though because even if you tell the food inspector that the food is properly sealed, I don't think they'd be okay with you stomping your feet on the food, but I personally wouldn't care, seems safe enough for me.

That is mostly due Japanese being able to appreciate good food, and quality service, all for a affordable price. Unlike a certain country, where waitresses are heavily underpaid, living TIP TO TIP.
