So I absolutely love this Chef and think he's THE MAN. I want to point that out right away. I am trying to save in order to take one of his classes, he's just awesome. But - having said that- the Margarine thing is just real & total misinformation. For decades there has been the popular statement about "Margarine is one molecule away from plastic" or acrylic etc. It's one of the best-known examples of "Junk Science" ... You can watch KZbin videos of people - Scientists, Chefs, TV Hosts, etc- making Margarine in front of your eyes with ingredients almost anyone has in their house right now. No plastics involved. Junk Science is a particularly dangerous form of misinformation in our day & age (Dare I use the phrase "Fake News" ...) - There is an OUTSTANDING "Law & Order : SVU" episode with Sharon Stone as a guest-star Assistant District Attorney - and the case involves a house that burned down, a Dad who tried to save his family (several of his daughters died) and they are *ABSOLUTELY CONVINCED* he was an arsonist and therefore a murderer - he has a history of financial problems, he made an insurance claim once lol, and the Fire Inspector Bossman is *positively convinced* that it was Arson - there is POSITIVE PROOF that accelerant was poured on the floors and walls and it's a ROCK-SOLID, SCIENTIFICALLY_PROVEN case! ----- Unfortunately that was completely wrong, and they conduct an experiment - literally hiring a *real* scientist and fire expert to burn down a similar house and film it - and show how it actually happened. The reason I bring all this up - ~35 years ago, when I was in 1st Grade, MY OWN HOUSE burned to the ground - and after a short time, local authorities tried THE EXACT SAME THING to pin it on my parents ... Clearly they wanted to burn their house down! They wanted insurance money and a new house! And their Fire Inspector *SCIENTIFICALLY PROVED* that it was intentional. .... That was, until, his theory was destroyed because *he didn't know that there was carpet installed in one room* - that was one of his areas he claimed Accelerant ways laid down - and the "evidence of accelerate being laid on the floor" in ANOTHER ROOM was the security system that was installed under the tiles of the front room (so wires and pads etc. - if someone steps on it after the alarm is set, the pressure sets off the alarm..) - *NOBODY HAD TOLD HIM THAT* ... When he was told that information - after a few months of downright accusations of arson - he COMPLETELY CHANGED HIS OPINION, "Why didn't anyone TELL me that! That makes complete sense! Obviously that's what I was seeing! I wish someone had mentioned that!" ...... The reason I explain this long story - "JUNK SCIENCE" ... You take a little bit of science and apply it to a little bit of knowledge and you believe you have a lot of scientifically-proven facts, like "Margarine is one molecule away from plastic" ... which could not be further from the truth. I apologize for a long story- but this is something of a passion of mine. I obviously love butter, and Margarine is not exactly Magic Miracle Butter Substitute Of Health & Wellness etc. But it's not one molecule away from plastic.

Oh Chef! I was in my commercial kitchen alone today after all of the other cooks had finished their projects and headed home. I was waiting for my 100 pounds of pepper sauce to finish the vacuum cycle (to remove air and prevent oxidation) and I thought about this video I watched this weekend and this wonderful pasta dish. So I scrounged around and did my best to come up with these ingredients. I had to replace the shallots with sweet onions and I had no vodka. But, I whipped me up a batch for a private dinner while I waited. I didn't cook a little sissy size batch like you. I am a fat, 70 year old red-neck who eats big, so I made a double batch. Ate every bit by myself. Boy was this delicious! I will admit to also top dressing it with a couple of pieces of fermented orange habanero pepper for a little zing. You are my hero! So glad I stumbled upon this recipe. From one old guy to another.....keep it coming!

We made it tonight... holy crap it was amazing!!!!! Followed the recipe to the T. Cooking the tortellini in the sauce for the last 30% made a huge difference. The cheese was Definitely flavored like the sauce.
