Mom raise rabbits when I was a Youngster hit behind the ears with the metal bar knocks them out, hanging on the tree and cuts their throat and skins them..

It's that slow braise that does the trick for tenderizing the rabbit. You can't beat a wine reduction for flavor. I really like the idea of roasting the veggies separately and adding them at the end. Much better than a typical stew. Good job!!

Just bought a rabbit at the farmer's market and already have potatoes, carrots and onions from the farm--going to try this! It looks great :)

Bro I like they way You organize and practically cook. I live in Germany and I make my rabbit similar to Yours. Veggies round off the dish. The Dutch oven pot is similar to the Roma Pot. You use fire where the Roma Pot is soaked in water. We say “Schmoren” which means Simmering. You cook with forethought. And the wine gives it an elegant taste. Thanks for sharing. I like the fact that You cook with fresh ingredients. Most Americans probably have never seen fresh carrots out of the ground.

When I was in culinary school chef called me hillbilly. I didn't mind I am a hillbilly. Come rabbit cooking day however..... Reckon who got the best dish? LOVE rabbit and I aim to try cooking in Dutch ovens like this. Your dang fried squirrel video hooked me.

What is awesome about him being so ressourcefull is that he is not limited to what he can find in a supermarket... Heck this guy doesn't even need a grocery store except for stuff that he does not feel like preparing like seasonings.

The trolls are so reprehensible, Just keep cooking the backwoods way - your way. Say, since you enjoy braising meats, how about either beef or pork jowls - sometimes called cheeks. I think that would be awesome.

Absolutely love this Lumberjack approach that yields the very best of flavors. If you are in a hurry during the working week, this can be done in a QuickiePot in 45 minutes, but no substitute for the real thing. When we are all in a hurry, this dude has a great recipe that can be used in quick technology. Our friend talks about having a 10 inch and being deficient of a 12 inch. I am going augment with a 12 inch for bragging rights :-) Marseilles rules!

Hatch Chiles are DELICIOUS!!! If you can get them fresh instead of dried, try them as chile rellenos, cut them into small pieces and place them in ground beef then form burger patties. They're also great to add whole into spanish rice or throw one along with a large onion and a few jalepenos while boiling pinto beans. And lastly, they make a great addition to chile verde sauce!

Sorry to miss how to skin & clean the rabbit first, I figured for most small game, your squirrel technique would be pretty much the way to go. Guess we'll see. Love this rabbit recipe!

Looks great...I ate sooo much rabbit back in the 70s when I was a kid. Dad raised rabbits for several years and we ate rabbit a few times a week. My mother had dozens of recipes and this one looks real familiar lol.

Looks delicious! I use a similar recipe for my small game except I'm allergic to onion so I use a little more garlic for flavor and cabbage stalks for texture. I also add about 4 tablespoons of sour cream to the gravy.

For the gluten free people, tell them they can substitute the wheat four with rice flour. That way they can be happy as well. For the pita people I have nothing good to say about them. I’m not a vegetarian I’ll never will be. Meat is good your show is wonderful looks delicious. Thank you for a wonderful show.

Keep up teaching us the wonderful ways to cook game. There may very well come a day folks may find they need this information for survival. Peta's and others can just stick to eating the root vegetables - "IF" they can find some. The rest of us will feast in times of famine. (Love the Celtic music in the background ..takes me back to my roots)

So simple. So beautiful. My favourite veggie combination. I don't eat carrots or parsnips unless they are roasted. Those look outstanding. The rabbit looks great too. Buddy of mine and I used to hunt, clean and campfire spit-roast rabbit. My wife gets weirded out about eating rabbit so I haven't had any for a good ten years. But, I could smell yours all the way up here. Love the vids. Temperature is going up to around 12F tomorrow so I think I'll grill some London Broils. I'll send up a smoke signal when dinner is ready. All are welcome. I'll even have beer and whiskey. Cheers.

Not all of us were taught how to skin; fine you didn't want to show it but saying it's out there without directing what way to look wasn't helpful. Believe me as hungry as we were growing up I wish my family had hunted and taught us as well as how to garden. I'm looking at some hard times in the near future so I am trying to learn the best way I can. Nothing like experience but sometimes that's not an option. So now you can complain about my comment but just telling KZbin as well as you some of us need all the instructions. Thanks for all you do share. I am appreciative of that much.

That looked really great. There is no such thing as too much gravy! The other day I was ready to deglaze my cast iron skillet and I grabbed a rubber pastry spatula just because it was right there, and it worked fantastic! It works really good for cleaning too. Try not to let the trolls get to you. I think the more subs you get, the more idiots will be mixed in. Keep up the good work!

I love your videos! Don't let anyone discourage you or stop you! These people don't realize that we are Americans and we are free! We live off our land! To hell with them! I'm a black man from Chicago and my Grand parents are passed but they are from the south and they passed traditions on to me as well. We eat rabbits, squirrels, turtles ect. They forget how this country came about! There were no stores to buy processed meat back in the day! They hunted their meals! To hell with all of them whining and crying. Keep up the great work and keep fighting the good fight!

Great, hearty Winter dish! I usually make Rabbit as a Summer/Fall dish with garlic, lemon, shallots and white wines, usually a Chardonnay or a Riesling. The Riesling seems best with Venison, though. Anyway, another nice game dish! Thanks!

This recipe looks delicious! Coincidentally I am going rabbit hunting this weekend. I will take the ingredients along. Nothing beats a wine reduction sauce. Instead of cornstarch, try thickening with a few tablespoons of butter.
