2:02 Japanese chef, 'Made with Lau' suggested soaking the dried shiitake mushrooms for 10 min maximum with warm water as the mushrooms will lose flavour if soaked for too long.

I've cooked shitaki mushrooms with my vegetables stirfry but the Mushrooms are mostly kind of rubber when I chewed it. I soaked them overnight, sliced them thinly and add it to my stirfry. How long is the best to cook shitaki Mushroom to a soft texture after dehydrating? I love the flavor but it seems to be tricky when cooking this kind of Mushroom. Thanks for answering question. 🙂 😊

No this process is for dried shiitake mushrooms only. Fresh shiitake just rinse and then cook.

Of course there are differences in shiitake mushrooms n prices as well. The best n premium are the white flower shiitake mushrooms. Some common ones are thicker n some are thinner. You can google if you need more info.

Yes thats what i do. I will portion them in containers let them cooled before freeze. Saves a lot of time. If i want to braise chicken i will take one portion defrost n Add to chicken. Its so convenient.

How long are the mushrooms sauteed? If it's just until they're coated then will that be just a couple of minutes? Also, how long can dried shiitake be kept? I haven't done well with similar recipes although I know that the results can be exquisite. I proved that with my two successes. I'm beginning to think that my using old shiitakes might have been the problem.

What does the coating snd rinsing do prior to cooking? If you font do this will they make you sick?

Get rid of dirt and other contaminants. If you dont do this you still have to soak in water with a few changes of water to be ready to cook. No it wont make you sick.

For everyone struggling with smelly and funky dried shiitake even after this washing process: Roast them in the oven at highest setting for about 20 minutes and remove every shiitake which is still soft/slimy/spongy. Prepare them as desired afterwards, they'll taste much more intense + without funky aromas.

I think this is a good way however, the corn starch is an unnecessary step and a waste of corn starch lol. The major key is after soaking and cleaning they have to be covered and braised in seasoned water for at least 1 hour until water level is reduced.
