The correct and delicious way to cook dried shiitake mushrooms without the bitter taste. Braised or stewed mushrooms can be prepared before hand to cook with chicken or stirfry dishes. Can be kept in the freezer when needed. Convenient and saves time when time is of essence.
Ingredients
150g dried shiitake mushrooms
Garlic
Ginger
Oyster sauce
Salt
Sugar
Soak mushrooms for 20 minutes. Drain mushrooms, add 3 heaped tbsp of cornflour to coat mushrooms. Give a good rub. Then rinse with water until water runs clear. Drain away water. Soak with clean filtered water for 2-4 hours depending on the thickness of mushrooms. Keep mushroom water for later use. Cut away stalks. Squeeze dry. It’s ready to cook.
Oil into a heated saucepan or wok, add oil garlic and ginger. Stirfry mushroom until all is coated with oil. Add seasoning ingredients n mushroom water. Bring to a boil, cover and braised for 1 -1.5 hours depending on the thickness n quality of mushrooms.

Isnt the bitter taste the medicinal properties of the mushroom though? So basically this is a way to eliminate the medicinal value just to make it taste good

2:02 Japanese chef, 'Made with Lau' suggested soaking the dried shiitake mushrooms for 10 min maximum with warm water as the mushrooms will lose flavour if soaked for too long.

I've cooked shitaki mushrooms with my vegetables stirfry but the Mushrooms are mostly kind of rubber when I chewed it. I soaked them overnight, sliced them thinly and add it to my stirfry. How long is the best to cook shitaki Mushroom to a soft texture after dehydrating? I love the flavor but it seems to be tricky when cooking this kind of Mushroom. Thanks for answering question. 🙂 😊

I think so. Dried shiitake also cannot be kept for too too long.

this is my first time cooking these marshroom and I've seen other videos where they soaked them in boiling water and then they squeezed while draining them i was wondering do you use cold water instead? and you don't squeezed them, may i ask why? It's because of the recipe?

It a bit neche for European audience due to corn starch is nonexistent. Does it work with potato starch?

For everyone struggling with smelly and funky dried shiitake even after this washing process: Roast them in the oven at highest setting for about 20 minutes and remove every shiitake which is still soft/slimy/spongy. Prepare them as desired afterwards, they'll taste much more intense + without funky aromas.

I think if you have smelly and funky shiitake aromas, you shouldnt eat them and should be discarded.

The mushroom stalks can be use to boil traditional chinese soup in place of mushrooms.

No this process is for dried shiitake mushrooms only. Fresh shiitake just rinse and then cook.

What does the coating snd rinsing do prior to cooking? If you font do this will they make you sick?

Get rid of dirt and other contaminants. If you dont do this you still have to soak in water with a few changes of water to be ready to cook. No it wont make you sick.

Just soak them, if they are in a nice round shape n smell good then ok to cook.

Yes I freeze them as I can’t finish. Can keep up to one month. Sometimes I take one or two , sliced and stir fry with vegetables 🥕 🥬🥦🫑

Yes thats what i do. I will portion them in containers let them cooled before freeze. Saves a lot of time. If i want to braise chicken i will take one portion defrost n Add to chicken. Its so convenient.

How long are the mushrooms sauteed? If it's just until they're coated then will that be just a couple of minutes? Also, how long can dried shiitake be kept? I haven't done well with similar recipes although I know that the results can be exquisite. I proved that with my two successes. I'm beginning to think that my using old shiitakes might have been the problem.

Yes saute just a couple of minutes. Dried shiitake mushrooms can be kept for a few months. Depends on how new or old When you bought them. Best to buy When you need them. Thank you for watching. ❤️

I supposed tea flower is almost the same as shiitake mushroom so this method is applicable for thick mushrooms.

No you cannot soak them for too long. If you you are not cooking them that day, they need to go into the refrigerator.

You can add 2-3 tbsp oyster sauce….depending on your taste buds ( some oyster sauce are more salty than others )

Yes ready to cook with anything you like….canned abalone, fish maw, chicken, sea cucumber or whatever. Can sliced and stirfry with pork or vegetables.

I think this is a good way however, the corn starch is an unnecessary step and a waste of corn starch lol. The major key is after soaking and cleaning they have to be covered and braised in seasoned water for at least 1 hour until water level is reduced.
