And the most beautiful thing is that to make a delicious plate of pasta you won’t need more than 3 ingredients most of the time (without counting salt,pepper,olive oil and Parmesan cheese,that will never miss in an Italian house) some examples,cherry tomatoes garlic and basil, aglio olio e peperoncino, tomatoes onion tuna, cream shrimps and courgettes, tomatoes onions eggplants….and so on forever

I cooked this for my family today and all were blown away! I used a big salad bowl for tossing the 500g of spaghetti, and it worked. It is the first time I managed to get a successful emulsion going for this amount of pasta. It looked and tasted exactly as good as in your video. Thank you so much for sharing this recipe ❤

I am shocked that the garlic and, especially the red pepper (!), are not cooked. That must be dynamite and fire in the mouth ?!?! And I love olive oil but, boy, that was half a bottle :) So, what do you say ?!

@@fredelin2580 you can decide for yourself how much chili you put in there. And for the raw garlic, its not as extreme as simply eating raw garlic, its much more mellow in the sauce. But the taste is much more fresh, and yes more pungent, than with cooked garlic. Which I liked a lot actually. What can I say, I just love garlic.

@@fredelin2580 and thanks to the emulsion, the endproduct didnt feel as oily as when i put half the oil but without emulsion. It felt like a proper sauce.

Thank you for making videos about dishes are relatively simple to make that still have tons of flavor! So many cookbooks seem to try to out-do each other by detailing recipes that take hours, even days to make, often with many super specialized ingredients or tools that are really hard to get if you're in a rural area. Thankfully, recipes like this one are things you can easily make after a day of work without falling asleep on the stove and everyone's happy.

Another creative dish, there are so many versions that can be unique with a few twists! I just thought about a kind recommendation, my tip is to leave the raw sauce in a jar or sealed container overnight so the flavours of garlic, chillies and parsley can be even more intense in the olive oil and give you an even more tasty result, just that !

I made this at midnight with some spaghettoni , didn't use chillies - too many can hurt my throat, but used plenty of garlic and the stems of flat leaf parsley and used dome lovely sweet on the vine cherry tomatoes, which made the sauce as little pink but was delicious...

I made this dish today for my friend and I, without a doubt it was an instant hit. So flavourful and just super easy to make, I can still taste it now in my mouth, think this will be a regular dish that I will make. Thankfully I also watched the Olive Oil video prior to getting the ingredients and makes such a difference. Amazingly good.

If you go to Napoli or Roma and order pork steak for example, most often thats all you get. Just a perfectly cooked, beautifully sourced pork steak on a plate. Maybe a slice of lemon and some parsley at most. Or tortellini in brodo, a famous Bologna dish. Its simple tortellini pasta in a flavourful broth, thats all. Very simple on the plate, and delicious if done right. Doing the broth properly is not simple at all, however.. If you order crudo, thats all you get. The best quality seafood you can have outside Japan and Faroe Islands, served as is with salt only. Raw and full of flavor. If it doesnt need messing about, it shouldnt get messed with. If you have great ingredients, then you should just cook them perfectly and mother nature will take care of the rest, and thats the italian way of cooking.

I just did your pasta alla norcina today and now this. It looks so good, I'll have to give it a try. Instead of finishing it in a dish, I'd use a warmed up pan, just go get some warmth into it. I think this will improve the emulsification of the sauce and allow me to mantecare it properly. But apart from that: perfection! 🤩

Great recipe Vincenzo! Fascinating how the food ways vary depending on families and traditions. I’ve been making pasta a la carrettiera for 36 years. However, my sauce is different, I make the raw sauce and add the hot pasta to it just like you do. I am of Italian descent and married the son of a Sicilian. The recipe I use comes directly from my husband’s Nonna. As an italian you know that la Nonna will teach you how to cook “her way” for her “precious babies”. But it is different. Much love Vincenzo. I once ordered a pasta dish with the same name at a restaurant in San Diego but it was only an Aglio e Olio (it was great though) but I didn't know it was a combination of Aglio e Olio and Cacio e Pepe. I will cook it at home, that looks delicious. Graze per la ricetta!!

This was so good and easy to make. I didn't have fresh red chili peppers so I used 1/2 tsp. red chili flakes. I'll probably add more next time though. Also my small town didn't have Pecorino Romano cheese so I used fresh grated parmesan. Better than we've had at any Italian restaurant. I'm sure my husband will want me to make this weekly too.

Me? I would have put all the ingredients into a frying pan on low heat, mixed and warmed them all up, to keep everything warm. Then tipped the ready-salted and boiled spaghetti into the frying pan, together with the grated cheese, and a drop of the saved pasta water to keep everything warm and moist. Mix them all up in the pan, on low heat, and then tip them onto a pre-warmed plate! The VITAL importance of keeping everything warm before serving! Nothing is worse than serving a hot meal on a cold plate...trust me! Take care, all, and enjoy your Pasta meals.... as I do!....😀....😀...!

I tried this recipe today and it turned out amazing. something completely different especially with these nice crunchy bread crumbs. Really nice idea. I've never heard of this before. These are my favorite type of dishes that you share. I don't share your knowledge of Italian food, but one thing I know about Italian food as it's true for every cuisine globally, is that there are always different "levels" of food. Some things are more gourmet, somethings require intense effort, and there are some things that people eat that you can just make for a weeknight dinner. But none require a person to cut corners. And you make a lot of simple dishes like this, but no cutting corners! I guess I'm a peasant, because I like these more peasant dishes. Not even just the Italian ones. But pretty globally so.

i tried and no need to use the pan , nice 👍cant find chilli flakes but use the Asian chilli flakes- sichuan numb ones instead , not bad , thks for the nice recipes , family loves it especially the young kids . thanks
