1 1/2 cup all purpose flour 180g
1/2 cup cornmeal 72g
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
10 tablespoons unsalted butter, room temperature 142g
2/3 cup granulated sugar 127g
1/4 cup light brown sugar 48g
1/4 cup honey 84g
1 large egg yolk

IN THE MIXER about 2 minutes: 10 tablespoons unsalted butter, room temperature (142g) 2/3 cup granulated sugar (127g) ¼ cup light brown sugar (48g) THEN ADD: ¼ cup honey (84g) [MIX] THEN ADD: 1 large egg yolk [MIX] THEN ADD: ¼ teaspoon butter extract [MIX] THEN ADD: 1 ½ cup all purpose flour (180g) ½ cup cornmeal (72g) ½ teaspoon baking soda ½ teaspoon baking powder ½ teaspoon salt [MIX UNTIL DOUGH FORMS] FORM COOKIES AND DUST IN: 2T granulated sugar (for rolling) (24g) 1T cornmeal (for rolling) (9g) 350°F oven for 10-12 minutes. @ob1smom absolutely! Try half or a quarter of each and see how u like it. I wd suggest u do half the recipe and see how it goes.

When I started teaching in 1983, there was a cornmeal cookie made by cafeteria staff that was wonderful. They gave me the recipe, and I lost it. Then many years later I asked again, and they had no idea what I was talking about. I hope this is close to what I remember.

Add some lemon zest to the dough and then on top, combine sugar with lemon juice into a thick paste to cover a dollop onto the baked cookie and place an almond in the middle of that.🥰

Yeah, I'm going to have to convert it all to ounces to even have a clue how much to start with. A teaspoon or a cup? I've no idea how much 180gms is.

@@christajennings3828Agreed! I’ve given up trying to figure out modern ( post decimalization ) U.K. recipes! I left England when pounds and ounces were the norm. I have been able to adopt the Canadian cups and spoons method but grams and millilitres are beyond me!

These Cookies are wonderful with Tea or Coffee. The Butter Extract is strong so only use like a quarter of a teaspoon per batch. Deliciousness! 🐧🍏🍎💙

Hamloaf: For the Loaf: 2 lbs ground ham 1 1/2 lbs ground beef 1/2 lb ground pork sausage 2 c ground graham crackers (or 1 cup soda and 1 cup graham crackers) 1 1/2 c milk (or 1/2 cup ham juice and 1 cup milk) 1 finely chopped onion 1 finely chopped red bell pepper 1 finely chopped green bell pepper For the Sauce: 1 can tomato soup 1/2 c cider vinegar 1 T. dry mustard 1 c brown sugar Combine loaf ingredients with your hands. Can omit the onion and peppers if desired. Shape into a loaf onto a master roaster or bread pans. Combine sauce ingredients and pour over the top of the loaf. Cover and bake at 350*F for 2 hours. Uncover the remaining last 30 minutes of the cook. Makes 12 or more servings. Reheats well. Good for sandwiches. Pairs well with potatoes and steamed vegetables.

Grandchildren are the reward for letting your own children live through puberty, LOL! I enjoyed, and still enjoy my sons, and have a great appreciation for grandchildren (this first of which is getting married today (Saturday, October 5, 2024)!

@@kitchenintheshire They vanished yesterday, while watching the game. But they looked just like yours only a darker color. I just substituted molasses for honey, 2 Tsp caramel sugar free coffee syrup for the butter extract, 1 cup monkfruit with allulose confectioners sweetener for the sugar, I had no brown, half harina and half corn grits for the cornmeal, self rising flour for the flour/salt/baking soda/powder and added 1 tablespoon cinnamon, 1 tsp ginger, 1/2 tsp nutmeg and 1/4 tsp cloves. I was generous with the coffee syrup because I felt the grits would soak up the extra moisture. I also used the grits and monkfruit mixture to roll the cookie doughballs in. The dough was probably a bit wetter than yours but still held the shape nicely. Baked for eight minutes in my toaster oven. Were even better the following days. Made 24 3-4 inch cookies. The hallmark for a good recipe is one I can adjust for my dietary needs and use what I have on hand and it still turns out great! So, thank you. Sorry about the no photo, probably wouldn't know how to send it if I had taken one.

My three-year-old granddaughter loves cookies but if there are raisins or chocolate chips in them she destroys the cookies picking them out first. Then she eats the rest of the cookie. I was looking for a recipe that did not have "stuff" in them but also tasted good and these fit the bill. She helps me make them and it is a plus to not have to chill the dough and we don't have to wait to bake them. She loves to add the ingredients and roll the dough in the sugar/cornmeal mixture. Great recipe. Don't leave out the butter extract!

My grandma used to get government food boxes in the 80s. We all remember that government cheese. Anyway in that box was cornmeal and there was a recipe for cornmeal cookies on that bag of cornmeal. We made them, they were so good. I have never had them or seen anyone make them since. I will try this recipe.

These look really good and easy to bake. I must make some of the butter extract, and then these cookies. I really love homemade cookies, but my favorite is an ANZAC biscuit, using Bon Appetite's recipe. I substitute light agave syrup for the golden syrup. They are amazingly delicious, and it's no wonder they are so popular with Aussies. Thank you so much for the recipe and video. 😊💖🙏🏻

I have never heard of this cookie,either! I wish “butter extract was not part of the recipe as I’m sure “homemade “ taste much better then the artificial stuff called “butter extract “ in store. I have everything,except that,to try these….still,they are unusual enough that I may try a workaround… Thank you.

I made them. Exactly like the recipe including the diy extract. I was hoping there would be a more pronounced corn flavor but all I could taste was the honey. 😮I just realized I used cornflour instead of cornmeal. I’ll try it again. 😅

I was wondering what it was going to be and then when you said it I knew I had to make it. They sound awesome. Subscribed. And for lost recipes, here's one that I remember from when I was a kid that old folks used to make that I haven't seen or heard of since. Have you tried patty pan squash custard? I can only vaguely remember the taste and texture but I remember liking it. It was nice and sweet.

If you're not measuring ingredients by weight I encourage you to reconsider. I had my doubts at first but since giving it a try I've discovered that weight measures turn out the best, and most consistent, end result, every time. Using metric measuring also seems to make the recipe flow better. And it's so easy- no mental juggling. Having to switch between "C,TBSP, TSP" with empirical measures always seemed to throw off my train of thought, and then I'd forget something, or double something-especially if I was doubling the recipe or whatever. You get the point. These cookies sound good. When we get to Oklahoma I'm going to try this. (We're in Wyoming, my pantry just arrived in Oklahoma. It might take a minute. Lol)

Cornbread cookies 😋 at least to me. A favorite desert from early on was a slice of hot cornbread with a generous application of butter followed covered in honey. These sound more responsible, dietarily speaking.

This definitely sounds like a cookie I'll love. My grandmother used to make a cake that had a cornmeal kind of taste & texture. It was very simple. There was no frosting. She just drizzled a bit of a glaze on it made from powdered sugar & probably lemon juice. I haven't found a recipe for it. Just wondering if you might know the kind of cake it was. It probably originated from the depression era. I don't know this - just speculating. Anyway, if you know of this, I would certainly appreciate learning about it. Thank you for the cookie recipe too.😊

Hi, Renee! I caught your show last night on making that butter extract, and I am thinking of making these cookies for our Thursday social at our clubhouse next week. I’m so glad you showed how much of the extract to use. I may have gone with a whole teaspoonful! 😮 I do have a recipe of something I’d love to make, but I don’t know where to begin. In Oakland, CA there is a coop bakery that makes delicious cornmeal and dried Cherry scones. My husband and I retired to beautiful WA state about 2 years ago, and fear I may never taste one of those scones again. I’m am not a seasoned baker, so I am not clever enough to figure out how to make these scones. They were a really good size, not too dry or crumbly, as some scones can be, not shaped in the typical scone triangle, and froze beautifully. I have even thought of calling the bakery and asking if they could take an order over the phone (which I’m sure they’d gladly do) and ship it to me. But, oh, boy….the shipping cost would be out of this world! So, I hope you either have had a cornmeal and dried Cherry something (scone? Muffin? Cookie?) or are, unlike me, clever (which I believe you are!) and can come up with a recipe that creates something akin to those scones. BTW: I don’t remember if they were sweet or tart dried cherries; but, I love cherries anyway I can get them! Thank you for these videos!

Have you tried checking out Joy of Cooking cornmeal scones video? She used dried currants but dried cherries would work just as well…hope this helps!

Fellow ex-Oaklander here! I seriously miss Arizmendi, I would walk there every weekend for a cinnamon roll. The cookbook for the co-op, The Cheese Board Collective Works, has the recipe for their corn cherry scones. 2 C flour, 1 1/2 C cornmeal, 2/3 plus 1/4 C sugar, 1 C butter, 1 1/4 C buttermilk, 3/4 C dried sweet cherries, 1/2 tsp baking soda, 1 tbs baking powder, 1/2 tsp salt. Preheat oven to 425, cut butter into dry ingredients. Mix in cherries. Make a well and add buttermilk, form dough into scone shapes (theirs are round) and sprinkle w remaining sugar. Place scones in oven, immediately turn heat down to 375 and bake 20-25 mins. Enjoy!!!

Wow, an American who uses actual standardised units of _weight_ for baking recipes! I've just subscribed. I rarely bother as the conversion between volumetric measurements and weight ones is just impractical when it comes to anything that varies in 'size'. I recently found a nice-looking recipe that called for a half-cup of ground almonds. I had no way of knowing if I had enough whole almonds to be able to grind a sufficient weight to make that volume of ground almonds, so I shrugged my shoulders and navigated away. I can find 'fine' cornmeal here, or polents, but nothing between. Which woukd you recommend for this recipe?

I have NO idea what the actual name is, but my grandmother used to make something that we called "Hard chocolate cake" It was a yellow cake with a chocolate icing that set firm to the point that it would crack when you cut into it. The icing was a bit grainy, but we loved it anyway. Would LOVE to know if you have any experience with this or know how to achieve a hard icing.

I think the butter extract gives the butter taste a lift. Butter is always yummy, but this just added a zing to the taste. Thank you for the comment!

Love that you use grams, I only bake gluten free, its more accurate to use grams. I think my son would like these, he has to be gf and likes cornmeal anything.

American here. THANK YOU for giving weights, in grams!!! I get that America can't switch to the metric system because we would have to retool every single factory in the country. But that's no excuse for the rest of the population to not learn how to use an exceedingly simple method of measurement. Changing quantities in recipes is so much easier. I would much rather divide 48 g by 4 then do the same with 1/3 C.

The USA has been using the metric system since the 1870's. People are ALLOWED to use English units, but the standards are based upon metric and converted.

I learned to cook using measuring cups and teaspoons. I didn’t see a need to switch. It wasn’t until later on, that I realized that I could buy a cheap scale, measure everything, and get a consistent bake every single time. I was overjoyed!!! Thank you for the comments!!

My mother makes a similar cookie, but uses oat flour instead of corn flour and I'm not allowed to share the secret ingredients. They turn out slightly flakey and crunchy on the outside and soft and chewy on the inside, with a buttery, honey, caramel kind of flavor.

Just made a batch using your measurements, save for the actual cookies themselves--I made mine a bit smaller, and the end result was a more flat cookie. The texture was amazing nonetheless, and have immediately placed themselves among my top three favorite cookies. PS. I also made some of your butter extract to use in these, but I don't feel the butter flavor was especially enhanced by it. That being said, I dare not bother trying this recipe again WITHOUT the extract.

I think they will be fine. The butter extract gives a little boost, but they will still taste good. You could also experiment with a little vanilla to give it a different boost. Thank for the question!!

I used a medium grade. I think any corn meal is fine. It may change the texture a bit. I'm going to experiment with this the next time I make them. Thank you for watching!!
