remember pouring very hot juice in a cold jar can cause the jar to break...you could wrap the jar with a hot wet towel to warm the jar up......never put a hot jar in the refrigerator! let it cool on the counter first for a couple of hours or get ready to clean your refrigerator after the jar breaks!!! that's experience talking! but I have a pretty pink fridge now....

Back in the 1980's, a friend's wife use to make a gallon of jalapeno pickled eggs every weekend and a month later my friend and I would eat a gallon of eggs watching sports. Boy, they were good with cold beer, but everyone paid for it on Monday at work.

It was tradition on my mom’s side to make pickled beets and eggs for 4th of July. Beets were home grown and canned. The eggs were from Grandma’s chickens.

After the mixture comes to a boil, I turn the heat off and dump my boiled eggs into the pot with the liquid. By doing this the eggs are a solid uniform red all around with no white spots where they were laying up against the jar. They only need to sit in the pot for few minutes to turn red, then just add them to a jar and top with the pickling liquid, but now there are no white spots, even where they are laying against the jar

Pickled eggs must be kept refrigerated and should not be left out at room temperature. The Centers for Disease Control and Prevention (CDC) recommends the eggs be left intact and not poked or pricked, or otherwise handled in a manner that might allow spores or bacteria into the yolk.

After I first commented, I made a small batch & it was the bomb! First 9f all, I do not buy canned veggies. There's practically no nutritional value as they're overcooked at the factory. I bought raw beets, cut & cooked em, before adding them to my jars. I did everything else according to directions. Super delicious. BTW. When you pour the hot liquid into the jars & place lids on, you're not required to refrigerate afterward. My jars sealed within a short time. I placed one jar in fridge to cool em for the next day, but the rest are stored in my pantry!

i use the liquid from my jar of sliced jalapenos to make spicy pickled eggs. a dozen eggs fit into the same jar that the peppers came in. ---sometimes i do the same with the liquid from a jar of pickles & i use those eggs for egg salad.

Have never had trouble peeling eggs, but decided i would give your method a try to see if it could possibly get easier.....now i know what it is like to be so angry that i literally punched an egg and sent scrambled fragments into the furthest reaches of my home. I LITERALLY...PUNCHED.....AN EGG!!!!! Honestly didn't work for me. Seems to glue the egg to it's shell every time and bring about uncharacteristic bouts of rage.

Best pickled eggs I've ever had. Giant jar of pickled jalapenos slices from Walmart bulk section. Eat all but 1/4 of jalapenos. Fill jar with 29 hard boiled eggs. First run a toothpick through the eggs. Wait for a week. AWESOME!!!!!!

I just put up a dozen eggs in a 1/2 gallon jar, I roast my small beets, slice them in an egg slicer and throw the spice rack at the brine. I am 78 years old and I grew up... As did my 4 children.but why would I do all this other than you do it because you like the pickling. I always did as Mom Dad bought a can or jar of pickled beats... Served the beats for dinner poured the juice in with the eggs... No heating... Just dumped in with the eggs and stuck it in the refrigerator... Always used empty mayonnaise jars

Sorry to here Steve passed. I came back to this video for the great recipe. I haven't made pickled eggs for a couple of years and forgot the basic recipe. I like to add roasted and diced jalapenos to mine. I roast them over a gas burner, then peel the skin, chop them and add to the solution seeds and all, as it cooks. Gives the eggs a little zing.

Yup, I will only eat pickled beets cuz really plain beets do taste like dirt to me. We just pickled them right before we ate them with a bit of sugar and Vinegar. It’s funny to me cuz the only thing I use pickling spice for is for a shrimp boil up or when I cook corned beef in the crock pot. I also love doing pickled eggs the same way I do dill pickles. YUM.

The Mrs. says: No need to put the beets in the pickling juice, I layer the eggs and the beets first then pour in the juice, how ever I use fresh beets and simmer them until tender, peel and cut up the way one would want they taste so much better then those mushy canned beets. Plus they will not be so sweet like canned beets.

Judt FWIW - if you put about a table spoon of any cooking oil into the water when boiling eggs, you'll find the shells come off really easily.

This is my go-to recipe for pickled eggs. I find that I prefer apple cider vinegar but that is subjective. I could eat them every day.

Just like my mom used to make! Some people don't add the pickling spice . Yuck! We'd let them sit for a least a day before we'd eat them.
