I haven’t tried drying out my own herbs (if that’s what you’re asking) but I’ve always come to understand that dry/powder versions are more concentrated in flavor. But also slightly different in flavor.

@necrohunger Rough story. If you google "pancetta pronunciation" you will get nearly exactly what he said for basic english, which is what he is speaking. Even in full italian pronunciation, he did fine. Sorry he didn't Rosetta Stone italian before saying pancetta for you.
