Fun fact: even though Poland is one of the biggest exporters of molasses (I think we're 6th in the world or sth like that), our cuisine doesn't use it... at all. Just like meme mum, most of us have never even seen it, and a typical Polish gingerbread recipe calls for honey :). We also use a bit more spices than just ginger and cinnamon - a classic gingerbread spice mix would also include cloves, anise, nutmeg and cardamom, and then some more, depending on what you like/the maker if you bought a ready-to-use mix. @Karolina, if you'd like to try a really retro recipe, pop over to Toruń (once the pandemic craze is over of course), some of our recipes are 1000 years old :):):)

it's really nice to know different place variations💗💗💗! These spices are what we have in chai (I mean tea, not the flavouring packets/food beverage trying to be it) - Indian tea (it varies area to area though; some use chili or black or green cardamom). So that's lovely 🥰💗

Not that many Americans have a baking scale. Sure I could buy one at the everything store (Target), the same place I can get a cupcake pan for my toaster oven, a gun safe, and some organic coffee, but I don't have any recipes that would use one. (Those first two examples have to be ordered online, but you can get regular safe and a more standard toaster oven bake set in stores)

Some fancy shmancy bakers have ovens on the eye level, so they can always see what is going on inside. Those ovens are separate from the stove.

Most modern european households have build in ovens that sit neatly in the counter, not just on the floor, I'm guessing that's what she's referring to. Very cheap apartments often still come with a cheap old oven/stovetop combo, it's always interesting to me that all/most americans seem to have those, no matter what social class, even in expensive houses.

Here in Canada, our butter usually comes in 2 lb blocks (454g). There are markings on the packaging that indicate how much of the block is 1 cup, 1/2 cup, and 1/4 cup. It makes measuring butter really easy.

When I lived in Spain (I'm an American), I was able to order American measuring cups and measuring spoons from Amazon. It certainly helped when I was trying to make American recipes in Spain, where everything is metric. Can't wait to see how your baking turned out : )

Molasses is what makes brown sugar brown. It's the sweet syrup that is extracted from sugar cane in the process of making refined white sugar. The "refining" is the removal of the molasses.
