Love your videos! Does the stop lever affect the performance or accuracy of the balance wheel?

I think there might be some sentiment that it's possible over time and so a lot of really high-end watches don't have hacking. But in reality, I'd say any impact would be negligible and with a mechanical watch serviced every 5-10 years, other wear and tear issues would be more likely than anything related to the stop lever.

also what are your thoughts on keeping a watch (newer watch) on a winder all the time, vs letting it wind down between wearing and even stop... to protect the main spring (get it off max tension).

I don't use winders and wouldn't recommend them unless you have just two or three watches and trade them out every couple days or so. It's a waste of power (the winder) and unnecessary wear and tear on the watch parts if you have long stretches between wearing them.
