1:15 3 ways to extract the phytonutrients from cucumbers
Let’s talk about the incredible health benefits of cucumbers. Cucumbers have 73 different phenolic compounds. Cucumbers also have certain phytonutrients that are in cruciferous vegetables.
5 basic benefits of cucumbers:
1. Cucumbers may help stabilize blood sugars
2. Cucumbers may help stabilize cholesterol
3. Cucumbers have anti-inflammatory properties
4. Cucumbers are loaded with powerful antioxidants
5. Cucumbers provide fiber to make butyrate (butyrate can help with insulin resistance)
3 ways to extract phytonutrients:
1. Ferment them (this is different than pickling)
2. Steam them
3. Eat them with fat (like hummus made with olive oil)

Dr. Berg I recently found your channel. Your videos are well done. I would like to share with you the hummus recipe that my Moroccan neighbors shared with me. Ingredients - 1 can organic chickpeas - 1TBS organic greek yogurt - 1TBS organic sour cream - 1TBS organic Tahini - 0 - 3 cloves of garlic. minced ( you can sauté the garlic to mellow it or you can leave it raw I enjoy it both ways) - Sumac - organic lemon - organic Olive Oil - organic cilantro, chopped Directions Drain the chickpeas of their excess liquid by pouring that liquid into a cup. Reserve the liquid. Place the drained peas, yogurt, sour cream and tahini and optional garlic into the blender and blend it up. Add as much of the reserved chickpea liquid as is necessary for the hummus to be the consistency that you like. Once you are done blending, place the hummus into a serving dish. Refrigerate 6hours - overnight to let the flavor develop in the hummus Just before serving: Sprinkle sumac on top. Squeeze a little lemon on top. Pour some olive oil on top. Sprinkle chopped cilantro on top. Enjoy Dr Berg and Keep up the excellent work!

Dr. Eric Berg DC thank you so so much for replying! I’ve seen that video 2 months ago but that’s just a little summary of H.I. All the ‘yes’ foods in that video, I can’t eat those. Those still give me a reaction. Only thing I eat daily are: Carrots, Onions, Almonds, Almond milk, Cane sugar for sweetener, Fiber Oat, Corn (barley), Millet flour, & black chick pea flour... everything else gives me a bad reaction. I’ve been dealing with this for 2 years now. It’s hell. For supplements I take probiotics, magnesium, k2 + d3 since it helps get rid of excess levels of histamine. I’m also a vegetarian so I can eat animals for DAO enzymes. Can you please please do a detailed video on histamine intolerance & its cure?? So I can live like a normal human being..

Absolutely adore cucumber 🥒 . Cukes are related to melons and they have a similar perfumed flavour, only more green and fresh. They are great sliced into iced water with lime and strawberries in summer. I love the crunchy texture. They’re fantastic for the complexion and I’ve even read they may help prevent degenerative diseases such as Alzheimer’s.

I never get tired of these videos, I am still a sponge when it comes to information and no one provides more great useful and easily digestible health information than Dr. Berg. Being Armenian, I've grown up with being accustomed to eating cucumber/tomato/onion/cilantro/lemon juice salad ever since I was a kid, we usually eat the Persian style cucumbers but I love pickled cucumbers as well. It's great to hear about the Bubbie's brand of fermented cucumbers. I've always loved that brand but I guess never paid attention that they are fermented versus the regular pickled cucumbers that are mostly sold in stores. Love the info Dr. Berg, please don't stop putting out these short but very informational videos. You're my only trusted health professional I get information from anywhere.

We eat 2 types of cucumber salad and both are super delicious: 1 - cut cucumbers small rounds, add couple of smashed garlic, lemon juice, olive oil, red chilli powder, mint powder. 2-cut cucumbers into cubes, smash couple of garlic, bring some yogurt put it in a bowl ad the smashed garlic mix it, add mint powder some (chilli powder exceptional) little bit of salt stir all well and eat it, it is super healthy and super refreshing in summer.

I love cucumbers! One way I love to eat them is sliced on a plate, drizzled with extra virgin olive oil, sprinkled with kosher salt and cracked black pepper, and sometimes I add a bit of fresh grated parm. It gives the "taste" of what I used to dip fresh baked crusty bread into, without the carbs. I know, not the same as the bread, but I do love that taste :)

@Aniruddh Rabinder Nath I'm pretty sure that, with neural imaging, it's been proven that the brain runs more efficiently on ketones rather than glucose. Humans didn't always eat as often as we do now, so they were naturally in ketosis much more often than modern day humans. The Asians are eating more calories overall so of course they're going to gain weight. That's merely their ignorance at play. Corporate greed does play a role but people also need to take some responsibility for what they shove down their throats.

Then I add some hydrolyzed collagen powder, the aforementioned spices then olive oil, lemon juice; mash it, eat it. Obviously I'm not a foodie or any sort of gourmet; I have a philosophy of eating that precludes aesthetics & includes a certain dismay over how our culture considers food (or, more commonly, "food-like substances") that I will not burden you with here. I'll just add that I don't eat from 2 AM until 6 PM ("Time Restricted Eating") so that when I finally do eat this at 6, I'm pretty hungry. PS- Stay away from the beach during tropical storms or depressions of any kind (except perhaps economic depressions: your call), including of course cat. 1, 2, 3-5 hurricanes. Other than that I guess you can love the beaches that are left; they're steadily shrinking due to the ravenous appetite of the rising seas that are constantly eating more and more of the land every passing day or so it seems. Rant over and out. PS- I suppose you could make a dressing at that... but that sounds like work, to which I tend to be allergic.

Awesome program! Thank you Doctor, a gift for you my personal Hummus recipe. Very easy, just puree the ingredients. I can of Chickpeas, also called Garbanzo beans (healthier to cook the dry beans of same amount). 1/3 cup of low salt vegetable broth, 1 1/2 lemons squeezed, 3 teaspoons of Tahini, (can substitute 1 1/2 teaspoon sesame oil), 3 garlic cloves, sea salt to taste, 1/2- 1 tsp of olive oil optional. Also an old family summer salad, sliced cucumbers and onions with salt pepper and garlic to season mixed with a small amount of vinegar. Very refreshing, in the winter my Mom would add a bit of sour cream to this. Thanks again for all of your great wisdom!

My favorite way to eat cucumbers is a sort of hybrid Caprese salad with chunks of avocado, tomatoes, finely chopped kale, mozzarella and lots of fresh basil, topped with balsamic vinaigrette and lots of cracked pepper. I also enjoy making my own hummus - so much better than store-bought.

Oi-kimchi is fermented cucumbers Korean style. I love it and so easy to do! Do not do the "quick" version, since it is an imitation. Do the traditional way. The best cucumber is Kirby: slit it in 4ths longwise but stop before you get to the end; sprinkle sea salt evenly and let it rest for 1 or 2 hours, rinse and dip them very quickly in very hot water, and immediately very cold water so it does not loose the "snap"; dry them with a paper towel lightly and spoon a mix of minced garlic, minced green onion and Korean red pepper (in proportion to the quantity you want to do) into the cavity resulting from the split you did with the knife. Put them in a jar and leave it on the kitchen counter 24 hours at least at room temperature. Make sure that your kitchen is not so hot or the kimchi will get a funky taste. I warn you: VERY ADDICTIVE!!! I ended up eating a big jar in two days... agh... ENJOY!!

It occurs to me... Fermented vegetables are acidic. Add olive oil and you basically have a vinaigrette without adding any vinegar. I did that for my meal last week, added a load of olive oil canned sardines and their accompanying olive oil to a pile of sauerkraut (and added shredded cheese on top because it's what I do lol) and it was super super good. Sort of a fermented cabbage salad topped with sardines and cheese
