In the Hulk comics back in the day a few years after the Hulk TV ended there was an old manical Hulk. I'm sure it was based on the TV show. Bruce was able to control the Hulk at the time(professor Hulk) and he had trouble fighting this guy cause he didn't have a mean streak.

You can get a big actor and do creative camera shot, wire work and stunt work. It can be done. And if you cannot get the desired effect you can use CGI to make the actor move. Harry and the Hendersons showed that you can have a monster made via big man with prostetics.
