Ingredients :
PRODUCE
2 red grapefruit
DAIRY
3 large eggs
1⁄2 cup plain whole-milk Greek yogurt
PANTRY
2 cups (240g) all-purpose flour
1⁄2 teaspoon (3g) baking soda
1⁄2 teaspoon (2g) baking powder
2 teaspoons (6g) kosher salt, plus a pinch
11⁄2 cups (150g) granulated sugar
1 cup (200g) plus
1 tablespoon extra-virgin olive oil, plus more for the pan
3⁄4 cup (85g) powdered sugar
3 tablespoons roasted, salted pistachios

Omg BIG PRO TIP: let the cake rest for a day or 24 for more intensified flavor. All the citrus juices settle with the olive oil and it is so much more bomb.

When I bake, I feel so methodical and calculated, so it’s fun to watch Molly bake with her cooking flair. Every motion seems so fluid - for example, something about her zesting the citruses is so satisfying to me!

You have such unique cake recipes in your current book that allows me - as an avid baker myself (and with a partner and various charities to bake for too) - to offer something different that go down a storm. I tried this cake yesterday, it was SO good!!! I just had to turn down the oven a bit, otherwise it would have burned. Aaand it only took 50 min in my oven. But it was freaking delish!!!

Yeah I was curious about this too, especially because the final cake she ends up glazing appears to have sunk as well. A bit disappointing that she didn't really address it IMO.

When you open the oven door halfway through--say, to check doneness or rotate the pan--it suddenly lowers the temperature. Any mixture that hasn't cooked solid and has this sudden drop in temperature tends to deflate and sink down. (Also, butt crack LOL)

65 to 85 minutes is a big range. do you just test at 65 by inserting a large toothpick type thingy? but what are the risks of the cake falling (like Molly's did) at this point if it's not ready? Maybe split the difference and do 75 minutes? ugh.

No. She explains in the video why she uses olive oil - because it's liquid at room temperature leading to a moist cake.

Try a mild evoo. The point of evoo is that it is still liquid at room temp whereas butter will solidify.

@@samanthameyer8541 How bad could it be with butter? Give it a try. It probably won't be as moist which is the main reason, she is using olive oil, but it will probably still taste good.🙂

I use regular veg oil (corn, canola) in my cakes/banana bread. I don't like the taste of olive oil. The oil definitely makes the cake/bread more consistently moist throughout. But I do like to put butter on a hot toasted slice. (for reference, I use 2/3c oil in a basic loaf of banana bread).
