It makes no difference whether you go 2 and then 1 or 1 and then 2. It will give you the same 8 possible squares that the knight can go to.

I have a question, why does knight move the way it does? What impacts does it make to the game?

It has a huge impact on beginning of the game, where you jump from your home square to center in just one move even without moving your pawns and mainly in endgame, where you can fight vs very closed positions. On top of that, you can fork two or more pieces at once and secure your win. It can only do a knight bcs of his special movement.
