I wish I could peel garlic cloves like that. I have to learn that trick. Peeling garlic is the bane of my cooking hobby.

tip: since it can't be refrigerated, you may add a bit of salt and vinegar to make its shelf life even longer 😊 (vinegar acts as preservative bc it has low pH and contains acetic acid, while salt minimizes water activity to avoid spoilage)

In my house it gets eaten long before it would spoil! Everyone in my house is addicted to it and it is put on nearly everything. I also do keep it in the fridge without a problem.

MY GOODNESS! The first time I followed this recipe, I made the garlic really crispy. My friends loved it! It was unlike any other chili garlic oil. Try to put it in the microwave for 10=20 seconds at a time, depending on the quantity that you will you. It will become crispy again. Remove the chili garlic oil from the microwave once you hear it sizzling.

Tip: Before frying the garlic, add one star anise and two cloves to the oil (can adjust according to quantity, but do not put too many, as the sauce may become bitter). Fry them for about 15 seconds, then add the garlic. A small amount of cinnamon stick can also enhance the taste. Try and experiment, adjust to your taste.

This recipe is very similar to one I make though mine also calls for MSG. I don’t put it in though, I prefer to use Hing (Asaefetida) instead. It turbo charges the flavour!

Great video. I like that you fry the chili in the oil instead of pouring hot oil on the chili. Compared to a chinese restaurant tho, my chili oil is not that spicy. How can i make it extremely spicy without burning garlic and chili?
