They literally answer the 1945 question in a movie. They were hiding in the ice caves from 1815(Waterloo) until 1967 when the movie takes place, then they briefly work for Scarlett, and then Gru controls them until the present.

I'm still salty at the retcon that the minions were just always around lmao. I liked the original backstory where Gru made them by mutating bananas, because it shows that Gru has always had a parental side to him, but didn't realize it, since he was always pretty nice to the minions and knew every one of their names. But on the other hand, Scarlet Overkill is a fun character
