I love making this every summer, I blend the mango with raw milk instead and I don't add any sugar. When I worked in Hong Kong I had the pleasure of eating at the restaurant of the chef that created this dessert I tried a different dessert he had at the time and it was so good. It was honey dew melon and water chestnut in tiny cubes, coconut milk and sago, it was a cold dessert, so refreshing, never thought I'd enjoy water chestnut in a dessert but it worked!

@@mddell58 I do not have the instructions, I was only at his restaurant once... I can describe it... it's like a soup, so I would think you make the sago the same way Mandy is here. Now I'm just guessing here, blend some melon with the coconut milk (might have to play with ratio and I'm not sure if this part was previously cooked then chilled, as cooking do bring out the flavor), So if you do cook it, chill in fridge for a couple of hours, cut some melon and water chestnut into tiny cubes like 4mm x 4mm then place every thing in a bowl...? that is my best guess from making Chinese desserts.

@@Shirogane-Naoto that's not true at all. Raw milk is literally a super food. Milk from industrial farms where the cows are shot with hormones and chemicals and fed GMO soy based feed is dangerous and what little nutrients is in the milk is cooked out through the pasteurization process. Raw milk from good farms where the cows only eat grass , get to roam around and are never shot with hormones or chemicals is the best thing for you. It's packed with nutrients.

I made this as written first and it was soooo delicious and my friends loved it! And I had a lot of leftover sago because I didn’t measure it, so for a few days after I made several versions with decreasing amounts of proper ingredients to use up the sago lol. Ending with a version made of sago, mashed banana, coconut milk, and evaporated milk. And it was still tasty!!!

I love this drink! Was just craving this when I saw it on my feed. Mango and pomelo season at my grocers rarely overlap. Lots of mangoes rn but pomelos are usually only sold around lunar new years.

That is wonderful! I never saw that method of making grapefruit segments before, and it seems just as good as the French method of digging the segments out with a paring knife. I wouldn't add so much sugar, though, and I might use honey instead.

If you let the tapioca sit in the fridge overnight, the starch will retrograde, and the texture will change a little bit. Well, I think it is delicious though.

Sago and tapioca are different things though. Sago is from the sago palm while tapioca is from cassava. The former is lot less gloopy. Though I'm not sure if real sago is available anywhere outside Southeast Asia so it doesn't really matter.

I tried making this today. The taste of coconut milk was very strong and overbearing for me and ruined the taste of the dessert
