I estimate Julia uses about 40 pots and pans on each show! Her comment “YOU could cut off your hand, and that would be too bad because then you could not chop mushrooms anymore” as if she just thought about that....hmmmmm! I adore 😊 her.

Just a side note, her husband was the dishwasher during those early days of filming at the studio!

I grew up watching this episode in Chester County, mushroom capital of the world. I still own a large wooden basket of this kind with wire handles which held the flat wooden lid firmly in place. The baskets when picked up at the grower were lined with unglazed blue paper. Never plastic or Styrofoam packaging. Today I store my mushrooms unwashed in a large paper sandwich or bakery bag immediately upon returning from the grocery store. They will breathe happily for several days in the vegatable drawer with no damage.

Wow, I remember watching this exact episode as a kid. I asked my mother watch it and make the sautéed mushrooms for dinner, lol!

10:50 lol - "...you just might cut off your hand which would be too bad and you wouldn't be able to chop mushrooms anymore." I love her, and always have since I was a kid watching this on PBS as a kid.

I absolutely love mushrooms any sytle any way. I used to watch Julia with my grandmother and a young boy of 5 in the early 70s and continued till the very end.

@@geomondiale1768 I do love Jaques Pepin as well, but as a child I remember Julia and Frugal Gourmet. I want to say I was about 16 when I heard of Jaques, which I now have his books and watch him on PBS aka Create TV

I remember Julia & the galloping gourmet (graham Kerr) as a child of the 60's. They and others over the years (especially the early years of food network) have taught me a lot about food & cooking. Which I love to eat & cook! 🥰🤩

Mouth watering. I have to prepare twice as much mushrooms as needed because so many get popped in my mouth raw before they ever get to the stove.

She did grow up wealthy, and almost certainly did have maids as a child, but her remarks here are obviously tongue in cheek. The French Chef was aimed at postwar middle-class women who cooked for their families without help.

Yes Saute in butter! Yes. ..... and when you WILD HARVEST like I do because I check my wild mushrooms with FIVE WAYS? Yes. SAUTE them and then DISCARD the liquid it could easily be toxic. We also pad them off with paper towel after cooking.

Keep them in a paper bag. If they shrivel they can can be soaked and reconstituted.

No. The difference is, Julia, and I wish I could have explained this TO HER yeah. The difference is the one you CLAIM is best, is a YOUNG Mushroom. So you prefer baby mushrooms yes. As they mature you can see the gills yes. ~ Cheers , ~ a Mycologist

No do NOT put your mushrooms in the machines. SPORES everywhere inside it and you CANNOT see them. ... . You SOAK them move them like you show with the greens THEN let them soak so the BUGS crawl out. BUT I WILD HARVEST. And only when I can Five Point ID them! Or / if I know the PATCH from last year.

She was wrong about the Europe leaves them dirty because they think it keeps them fresher thing. Less handling is done to minimize damage.
