Ingredients] (1 to 2 servings)
2 bunches somen noodles
Chicken meat (motsu-ni)
pak choi (green onion)
A handful of dried bonito flakes
1 teaspoon Soujitchantan
1 tablespoon oyster sauce
1/2 teaspoon soy sauce
1/3 teaspoon sugar
1 teaspoon ginger
Toppings
Fried onions

Chinese pepper

Recipe
1) Chop pak choi (leek in the video) for topping.
2) Cut chicken meat into thin strips, season with salt and pepper, and sprinkle with potato starch.
Make the soup. Boil 500 ml of water, add dried bonito flakes and simmer for a minute or two to extract the bonito broth. Season with Soujiki Chantan, oyster sauce, soy sauce, sugar, and ginger.
Boil chicken meat and take it out. Boil the somen noodles until firm, remove the sludge, and add them to the soup.
5) Thicken the soup with potato starch and add aroma with five-spice powder. Add any toppings you like.
