For how long? Obviously not 25 minutes as you say in the video.. It's a shame because this looks like a great goose recipe, but I am no nearer to understanding how to cook it. Getting the temp and time wrong means its probably worth reuploading the video with corrections.

120c is 250F. That’s the temperature that I use to warm my bread. This guy is hiding something and not telling us the truth.

@@redfishing7797 USA USDA says 165 Fahrenheit which is 73.8889 C, which takes almost 1.5 hour for me plus rest time for 5.5 kilo bird, so no I don't think it is safe to go with mid rare, but one could try and get some 25 days of the hospital

I love goose for Christmas. I always do turkey for Thanksgiving but cornish hens, goose, or Maple duck for Christmas. The only thing is I never put anything sweet on my goose. I season it just like a turkey but especially this Christmas season since I just found out I was diabetic 8 months ago. I'm still trying to decide if I want cornish hens, goose, or duck next month since its only 21 days until Christmas.

An addendum from JJK- it’s nice to have all the gesticulations, and history, but the bottom line is the recipe and that’s the one place you’re not really careful with. Watch how that old French guy that used to cook with Julia child listen to how he describes his cooking. It’s concise it’s factual and he walks you through the steps and you don’t really have questions at the end. just trying to be helpful, but I really loved that table that you had set, it was as good as being at the Awani hotel in Yosemite

Mr. Middleton this is the US ofA--what degrees Fahrenheit and how long? That looks like a pretty big goose, but I followed the directions that you seem to leave. I would have a rare but not cold bird. So, in Fahrenheit and time would sure help. Jjk

It’s also resting for 20mins, during which time it continues to cook. As long as you preheat your oven you’ll be good. Of course, everyone is working with different tools and ovens so go with your gut 💪🏼
