My favorite soup but, I haven't had it due to being vegan. Wonder why drain fungus soaking water? It always use dried mushrooms to make my veggie broth deeper in color and richer in flavor by adding both the mushrooms and soaking liquid. Am I wrong? Was excited to see Dude try soup and then add some hot Szechuan oil ...can't say I'm not disappointed but, maybe white pepper is better so I'm going to try your recipe.

You could also add a dash of Fish Oil, or Frank's Hot Sauce, or some crushed red pepper flakes, and maybe 1/2 tsp of sugar or sweet & low... I might even saute the mushroom and cabbage to open up some of the flavors... and maybe even simmer the whole thing for at least 30-60 minutes before serving to allow it to really build flavor and it's own thickness...

Flo, ya got me! I've used nothing but my wok and IP since I found your channel 3 weeks ago! And I've never eaten more vegetables in my life and heading into 79th year feeling SO much better. Thank you so much for all this! Do you bring this soup back to simmer each time before you count "about 2 minutes"? I'm having a real problem with either over cooking or under cooking veggies in general and there would be a real difference If you are estimating your timing for ingredients from the time they go in the pot or from the time the soup comes back to a simmer .

Simmer for 2-3 minutes after the carrots and cabbage. Add tofu, mushrooms, green onions, vinegar and soy sauce then bring it back to a simmer. Then add egg and cornstarch slurry and heat through. I was thrown off when I had to switch pots! Hope that helps.

Yes, that surprised me that it was white pepper that was the "hot" in hot and sour soup. I always thought it was chilis.

@@gelwood99 Black pepper works too. I worked in a Chinese restaurant for years, only one cook could speak English, the rest only Chinese. One of the cooks came to my house to visit, he saw my cat and talked about eating it! Yikes, that was in the late 80's They had egg flower soup on always on the hot plate, many vegetarians (and certainly not cat eating people) here, so when someone ordered Hot and Sour soup we would just add vinegar and black pepper to the egg flower soup. That said, Flo's recipe is better!

@@FloLum Thanks Flo. As a scientist who moved from Europe to Canada I am far more comfortable using metric. I also weigh dry ingredients rather than using cups as weighing is so much more precise. Obviously this is less important in cooking than in baking. But I avoid recipes that involve cups or fractions of cups. I particularly hate recipes where you get instructions like “take two cups of flour minus three fourths of a tablespoon”. That is nuts.

This is the 3d video of yours that I watch tonite and I like them ! These soups (eggdrop w/chicken or shrimp) are luscious and full of great things. This one tops them all in the "stuff" department. One big bowl of this would last half the say in the belly. Yum ! I would use those little red peppers for the heat (the way my fave restaurant makes it) or how about Hot Sesame Oil ? Thats got the heat. though not too high and the delicious flavor of the sesame . Love your cooking .

Hi Flo, Thanks for posting your Hot and Sour soup recipe. Like you, I was introduced to it in a favorite restaurant, and then went on to develop my own version(s). I don't add cabbage, because cabbage and I just don't get along too well. However, a suggestion FWIW. If you're using firm or extra-firm tofu, try slicing it into strings, 2-3 inches long, square cross-section and pretty skinny. Sort of like short, square noodles. It changes the look and texture somewhat. tend to make up my own chicken or turkey stock, if I have leftovers available to turn into broth, and then freeze it in 1 L containers. Since by that point the chicken is pretty well done for anyhow, making soup from the "remains" just gets a bit more out of it. If it's "turkey time" I'll do a roaster full of turnkey broth and freeze it likewise - it's even tastier than chicken in Hot and Sour, I think. I've used a combination of re-hydrated dark mushrooms and sliced fresh mushroom when the price on those is down. One time I also tossed in the best part of either an orange or a lemon (I forget exactly), but it was not a great success as far as adding tartness. I'm just one Province over from you and Dude, so I may yet bump into you, either on the streets or in a campground. Many thanks.

Our house is non-pork (my husband eats beef, I don't) so I use ground turkey with a little smoked paprika it works well. When I worked in a Chinese restaurant they didn't put any meat in the hot and sour soup, so you can also skip it entirely.
