Well, this one sent me on an adventure. I had some watermelon rind so I recall seeing this and decided to give it a go. I didn't have citric acid, so I used some lemon juice instead. I also used Cherry Vinegar and some cardamom in my cordial. After all this, I discovered my cilantro had been thrown out! So I improvised with fresh basil and mint that I had growing. The cordial ended up amazing and reminded me of some Thai flavors. I can't find Italicus in my area so my attempt at the drink included a little mezcal, scant 1/4 oz of lemon juice, 5-6 drops orange blossom water and Mandarine Napoleon in place of the Italicus. I am very pleased with the result. Lot of flavors going on here but you can still pick most of it out. This is likely quite different from your offering, but I'm happy to have found a way to not waste my rind! Also, if you have a juicer; juicing the rind along with some other superfoods is a great way to create less waste.

just curious, what's the difference between using rice vinegar and white or apple vinegar? the same goes to the sea salt, is it like a flavour thing or they have some special properties that helps the cordial to be done faster or something like that?

Rice wine vinegar has a less astringent flavor, more mild and almost sweet compared to others. Salt is a flavor enhancer, so whatever you're adding will blend together better when a touch of salt is involved. You could probably use any vinegar, but you might need to compensate with more sugar.

Kind of a gripe: there's so much copy-pasted stuff in your video descriptions that have nothing to do with the video. I want to know more about the video and maybe a link to a recipe (which I don't even see). Can't you move all your barware and tool affiliate links to your website?
