I purchased a Tong of Sweet Dreams,and will sit on it for a few more years,but also purchased 2 more cakes,to enjoy for the time being. I find that 90 degrees Celsius works for me,as an all day drinker,it delivers beautifully.

Me too. I bought a tong and broke into 1 as soon as I got it. It was one of my favorites last year. In fact I liked it better than Jade Star VII at first, but something happened to my Jade Star cakes the last few months in storage and they got so much fruitier and creamier so they took the lead.

I agree I do 90 with most whites but I still like yin zhen a bit lower with longer brew time

One of my favorite experiments is taking a normal tea and adding toasted rice to it, similar to a genmaicha. I think that would go great with how you described the profile of this tea. The sweet, honey, and jam notes matched with warm toasty notes sounds gorgeous. Sadly, can't order any teas for a while so i hope someone out there tries this and tells me how it turns out lol.

Just used my powerup shipping yesterday on the gaiwan. But I love the unorthodox teas, and anything that is different or unique are my favorites. This really has me tempted to make an order especially at the price point.

I recently made two big orders so i felt that i were stocked up but the description of this tea and its sweetness makes me want to order this tea asap For now i will keep it on my wishlist and add it for yet another big order in the near future :P

@MeiLeaf - Don, can you remind us of your recommendations for aging Simple Dreams & Simple Dreams 2 at home? I’m thinking an airtight glass container, but am not sure if I should include a humidity pack. Denver has very low humidity normally

I'm in a neighboring dry state and use Biokips food safe bins with Boveda humidity packs for my tea storage. I monitor humidity and it stays level and seems to work well.

@@jsandppr I'm still unsure the best humidity level for white tea. I went with his original recommendation around 45% but he recently upped that higher closer to 60% but I can't remember which video.

I'd definitely recommend using a humidity pack. I'm using the Meileaf parameters for my sheng as well and the tea tastes much, much better with the boveda packs. You'll find both videos about the White Tea Ageing Study that @marianne8624 mentioned on this channel under the following headers: 1. "Learning How to Age White Tea TOGETHER!" and 2. "HOW TO AGE WHITE TEA - results of our storage experiments" - I live in a listed timber frame house which gets super dry during winter; so am thinking about ways of storing largish amounts of tea cakes safely as well. At the moment I use freezer bags with 8g 62% bodeda packs, but I have to re-charge the bags ever so often. 🙄So, thinking about a larger container made of some material that won't react with food. Glass sounds good, but the containers tend to be relatively small.

@@beth.7 I recently started aging my teas in this method too (freezer bag, and 8G packets) simply because the 8G was on sale. And I noticed they do "dry out" quite quickly. But also due to some limited storage space my main bin for everything (each type in its own bag) is actually a new ammobox. (Technically not "foodsafe" but there is no direct contact and it's been working fine for now.)

I always brew white tea on the hotter side of 90°c just because it works better for my taste & I generally drink shen Puerh so crave a little bitter note 😅

Great video and sounds like a great tea. I wonder how this compares to Jade Star VII? Also, for aging, I was wondering if aging tea in a cigar humidor where you can closely control humidity would work? seems like it would. You could keep the tea in a material that wouldn't allow the cedar wood in the humidor to influence the taste of the tea...Thoughts?
